This easy meatloaf recipe is a nostalgic dinner that the whole family will love! I teamed up with my friends at Organic Prairie to create this homemade meatloaf using their Organic Grassfed Ground Beef, which is pretty much always in our freezer!

Ingredients & Health Benefits
- Ground Beef: I use Organic Prairie Grassfed Ground Beef, which is one of my faves! Grassfed ground beef has more omega-3s which is one the reasons I prefer it.
- Breadcrumbs: I use organic breadcrumbs, which helps hold this organic meatloaf together.
- Bone Broth: I use Kettle and Fire Beef Bone Broth for flavor. But, this also adds collagen, amino acids, protein and more. If you don't have bone broth, you can use chicken or beef broth too. Use code MIMIBAKESCOOKIES for 20% off your order at Kettle and Fire.
- Eggs: Use large eggs, this is what binds this homemade meatloaf together. Eggs also have protein and omega-3s.
- Yellow Onion: Organic yellow onion is used for flavor, plus it has lots of antioxidants.
- Ketchup: I use Montana Mex Organic Ketchup, but your favorite ketchup also works!
- BBQ Sauce: I use Montana Mex Organic BBQ Sauce, which is a great BBQ sauce.
- Dried Parsley: I use organic dried parsley for flavor.
- Salt and Pepper: You'll need for flavor.
- Light Brown Sugar: I use organic light brown sugar that brings a sweetness to the sauce.
- Fresh Parsley: I top this with organic fresh parsley, totally optional though. Parsley can help with digestion, boost your immune system, and it adds a nice green touch to the finished dish for presentation.

Tools Needed
- Mixing Bowl: You'll need a large mixing bowl to mix up the meatloaf, sauces, and spices.
- Baking Sheet with Rack: I use my Kana quarter sheet pan with rack, this allows the meatloaf to cook well without getting soggy as juices can drip below the rack.

Step by Step Instructions
Step 1
Preheat the oven to 350°F. Line a baking sheet with parchment paper and add a roasting rack on top.
Step 2
To make the meatloaf: In a medium bowl, add the ground beef, breadcrumbs, onion, bone broth, egg, ketchup, BBQ sauce, dried parsley, salt, and pepper and mix together until uniform.
Using your hands, form the meat into a loaf that is about 9 x 4-inches and place on the roasting rack.
Step 3
To make the sauce: In a small bowl, add the BBQ sauce, ketchup, and brown sugar and whisk together. Set aside.
Step 4
Bake for 40 minutes, then remove from the oven and brush the sauce on top using a pastry brush. Bake for an additional 15 minutes or until the internal temperature is 160°F. Allow to cool completely on the rack.
Step 5
Add fresh parsley for garnish (optional).

Tips for Organic Meatloaf
- Use high quality ground beef for the best meatloaf. This organic meatloaf is made with my favorite Organic Prairie Ground Beef!
- I use Montana Mex Organic Ketchup and BBQ Sauce in this recipe. Their condiments are quite a bit different than traditional ketchup and BBQ sauce, as in they have way more flavor and spice! That makes this homemade meatloaf incredibly easy with less ingredients, so I recommend trying these out!
- Using a roasting rack for meatloaf instead of a loaf pan, is much better as it allows for the meatloaf to obtain a nice and crispy exterior crust.
- If you don’t have a roasting pan, then put a cookie cooling rack on top of a rimmed baking sheet and wa-la! You have a roasting pan now.
- You can serve this easy meatloaf on its own, or also with sides like Bone Broth Mashed Potatoes, Simple Green Salad, or Sweet Potato Fries.

FAQ's
Yes, if you prefer your meatloaf with pork, feel free to use half ground beef and half ground pork. If you want to make it more lean, use half ground beef and half ground turkey.
I love serving this with simple veggies or a salad. But for a more traditional meal, try my Bone Broth Mashed Potatoes or Bacon Mashed Potatoes!
Store leftovers in an airtight container in the fridge for up to 5 days.
