Baker's Tips

  • If you want to make this leaner, feel free to substitute half ground turkey.
  • Alternatively, you can also do half ground pork and half ground beef.
  • Using a roasting rack for meatloaf instead of a loaf pan is much better as it allows for the meatloaf to obtain a nice and crispy exterior crust as there is air flow on the bottom.
  • If you don’t have a roasting pan, then put a cookie cooling rack on top of a rimmed baking sheet and wa-la! You have a roasting pan now.

Recipe FAQ's

Can I make this meatloaf gluten-free?

Yes, you can just use gluten free bread crumbs.

Can I make meatloaf with different ground meats (mix beef, turkey, pork)?

Yes, if you want to make it more lean, use half ground beef and half ground turkey for a nice balance that will still give you cozy meatloaf flavor with a leaner meat. You could also mix half ground beef and half ground pork for more flavor forward meatloaf too. And, if you want to use all ground turkey, you'll want to ensure meatloaf doesn't come out dry, so soaking breadcrumbs in milk can help.

Why is my meatloaf dry or crumbly?

Meatloaf can become dry from over baking. Also, not having enough binder (egg) can also cause it to be dry. Eggs can vary in size, even for a large egg. If your egg seems small, add a tablespoon or so of milk to your meatloaf mixture to ensure it's not dry.

How do I store leftover meatloaf?

Store leftovers in an airtight container in the fridge for up to 5 days.

Can I meal prep meatloaf?

Yes, you can. Whether you want to meal prep this raw or cooked, you can do either. Simply wrap the raw or cooked loaf in plastic wrap and then in foil and freeze for up to 3 months. Thaw for 24 hours in the fridge. If raw, bake as instructed. If cooked, then re-heat on a warm setting.
