Mixed Greens: Feel free to use any kind of organic mixed greens or lettuce you have. Dark leafy greens are the healthiest option.

Green Bell Pepper: I use green bell peppers here, keeping with the theme, but honestly any color will work! Bell peppers contain vitamin C and antioxidants.

Avocado: I love organic avocado for some healthy fat and flavor!

Pickles: I use my recipe for The Best Refrigerator Pickles in this recipe. You can also just use cucumbers if you prefer.

Celery: Organic celery contains fiber and it can also help regulate blood pressure. The celery gives this salad a beautiful crunch.

Pumpkin Seeds: Organic pumpkin seeds are great for regulating hormones, I eat them almost daily to help with this. They also have healthy fat and fiber. I use the roasted and salted variety.

Pistachios: I use organic pistachios that are already roasted, salted, and shlled (for ease). Pistachios include healthy fats, protein, antioxidants, and more.

Green Onion: Organic green onions or also known as scallions contain prebiotic fibers that can help the good gut bacteria grow, which can improve digestion and boost immunity.

Can I use a different kind of lettuce?

Yes! If you prefer to use Romain, iceberg, or even kale, you can use any kind of lettuce you like or even a mix of a few different kinds.

Can I use different veggies?

Of course! Feel free to use any kind of veggies you like. If you want to keep within the green theme, you could add cooked zucchini, spinach, green cabbage, broccoli, celery…

Can I make this ahead of time?

Yes, you can prep this salad ahead of time. But, don't dress it. If you dress this it can become soggy, so just prep ahead and store in an airtight container in the fridge. Then dress the salad before serving it.

Can I make this larger?

Absolutely! If you want to make this as a big salad for a dinner party you can just 3x the recipe using the recipe card and it will triple it for you! If you're serving this as a side salad, then tripling the recipe will give you about 6 servings as opposed to just 3 if it's not the only thing you're eating.
