This easy Kale Apple Salad is a copycat version of the one they sell at Jimbo's Naturally! It has kale, cucumber, red pepper, apple, red onion, and poppy seeds and it's tossed with a light honey dressing. This is the perfect summer salad for any barbecue!

If you are a fan of Jimbo's Naturally, then you will love this Kale Apple Salad as I copied one of their deli salads. It tastes just like it! Jimbo's is our favorite health food store, they have all the good snacks. And, not only that, but they actually have an amazing bakery and deli. They make a lot of baked goods and foods there that are ready to go, and you can actually count on them to use organic ingredients. Unlike other health food stores that don't actually use organic ingredients in the food they make on site.
Jimbo's has all their ingredients listed on each item, so it's really easy to see what is in the deli items you are buying. And last time I was there, they had a Kale Apple Salad. It looked amazing and I trusted all the ingredients so I got a small tub of it. I ate it all in one day, it was so good! And because I knew what was in it, I told Delaney I would make when we got home. Now, I don't know their exact recipe, I just know the ingredients as they were listed. But, I will say that if you have ever had the Apple Kale Salad at Jimbo's that my recipe is basically an exact copycat!
If you haven't had it, and you go to Jimbo's I would definitely recommend you try it for a lazy night as it's totally worth it for convenience factor and it's delicious! But, if you don't have Jimbo's by you then you make my version of this Kale Apple Salad and I'm sure you are going to love it. You can serve this with some grilled chicken, steak, pork chops, or you can even add Organic Prairie Summer Sausage into the salad, which is something I've been doing lately and it's so good!

Cucumber: Organic cucumber is mostly water, so it can help you stay hydrated and go towards your water intake.
Red Pepper: Organic red peppers have vitamin C and potassium and they bring great flavor and crunch to this salad.
Poppy Seeds: I use Simply Organic Poppy Seeds in this recipe. Poppy seeds can help with bone health and also aid in digestion.

In a medium bowl, add the olive oil, water, apple cider vinegar, honey, and mustard. Whisk together. Set aside.

In a large bowl, add the kale, apples, cucumber, red pepper, red onions, and poppy seeds. Toss together.
Step 3
Add the salad dressing and toss to coat completely. If you're not going to eat the entire salad now, just scoop out a portion and dress, then store the extra salad in an airtight container in the fridge for up to 3 days. And store the dressing in an airtight container in the fridge for up to 2 weeks.

Yes! I use Fuji in this recipe, which is a sweet apple. I would recommend using a sweet apple as it pairs so well with the hearty kale and the honey mustard. You could use Gala, Pink Ladys or another reddish apple with a sweet flavor.
I love serving this as a side dish to any meat in the summer time, like my Grilled BBQ Chicken. You could also add in summer sausage, chicken, or turkey lunch meat to the salad as well to make it a meal!
