I love adding bone broth to classic dishes. It not only provides added protein, but it also gives favorite recipes a little upgrade with its slightly salty umami flavor! So, if you haven't had bone broth before, give it a try, I bet you'll love it!

Ingredients

- Bone Broth: I use Kettle & Fire Chicken Bone Broth which is my favorite. You can also use beef if you prefer. Using bone broth as a base makes this a protein soup, which makes this broth based soup a main meal! If you are making a whole chicken and making your own homemade bone broth, you can use that instead.
- Carrots: Organic carrots are a favorite veggie of mine for their slightly sweet flavor and they hold up well in soups.
- Broccoli Florets: You can use broccoli or cauliflower here, both will work the same way!
- Purple Cabbage: Organic cabbage is wonderful in soup as it is a cruciferous veggie that doesn't soften easily, so it stays crunchy. You can also use green cabbage as well.
- Green Onions: Organic green onions (or scallions they are also called) add the a fresh and almost grassy flavor to this veggie soup. I love them for a finishing touch.

Easy Add Ins for Organic Bone Broth Vegetable Soup
- Switch up the veggies to something you have in your fridge to use up leftovers. Other great veggies include: cauliflower, bean sprouts, celery, onion, bok choy, kale, spinach, and more.
- If you don't have bone broth, feel free to use chicken or beef stock as well, but this won't be a protein soup unless you add in meat.
- Add in frozen wontons at the beginning of heating, they will warm up easily for a wonton bone broth soup!
- Add in leftover chicken, steak, or tofu if you want even more protein.
- A great way to use leftover rice, add in cooked rice (white, brown, wild, cauliflower rice, it all works!).
- Add in a spice mix for more flavor — Thai, Italian, or even my favorite everything bagel spice will give this a unique flavor depending on what flavor profile you want!
- I like to add in a little swirl coconut aminos (or you can use soy sauce) and a grate of fresh ginger if I'm going Asian inspired. You could also add in rice noodles with this version too!
- If you want to go more classic or Italian, you can add in pasta noodles, and change the vegetables to tomatoes, mushrooms, green peas, onions, chickpeas, or bell pepper. You can also add in a little fresh garlic using a garlic clove or even minced garlic.
- If you want to cook raw chicken breast in here, you can do that by using a low heat while it simmers during the cooking process. Then, turn the heat up and add in your vegetables.
How to Make 5 Ingredient Bone Broth Vegetable Soup

- In a medium pot, add the bone broth, carrots, and broccoli. Put over high heat and cover with a lid. Cook until boiling and continue to cook until broccoli and carrots are cooked, about 10 minutes. Add in the cabbage and scallions and cook for an additional 1 to 2 minutes or remove from heat and just cover with a lid as the steam will cook the cabbage and green onions enough.

- Remove from heat and transfer to a bowl. Serve immediately.

You can, but I find that I don't like the veggies reheated as much. This soup takes less than 15 minutes, so it's quite easy to just drop them in when you heat the bone broth. If you want to meal prep this, just chop veggies and store in the fridge then add to the bone broth when it's time to heat.
Yes, for even more protein you can add cooked chicken or beef. This is a great way to use up leftover meat, just drop it in!
