Ingredients

- Sweet Potato: You can leave skins on or remove the skins, either works. I usually prefer to remove them.
- Pumpkin Spice: I use my homemade Pumpkin Pie Spice Mix, but store bought also works.
- Smoked Paprika: I use a little bit of smoked paprika for a little bit of heat.
- White Pepper: Organic white pepper gives these a little more flavor, but you can use black pepper if that's all you have.
- Coconut Oil: I coat these in organic coconut oil as I love the contrast of this sweeter oil with all the spices. But, EVOO or avocado oil also works.

Baker's Tips
- While I prefer sweet potatoes, you could also make these with Russet potatoes if you like!
- Avocado oil or EVOO also work if you don't have coconut oil.
- You can soak the sweet potatoes in a bowl of water for about 15 minutes (until the water turns murky) beforehand if you have time. This can help you get crispier fries! But, I find these are just fine without this step too.
- Don't salt the sweet potatoes before baking as salt can draw out moisture. So, always salt these pumpkin spice French fries after baking!
- You can make these in your air fryer if you prefer!
How to Make Pumpkin Spice Sweet Potato Fries

- Cut the sweet potato into ¼-inch wide long strips. You can leave skins or or remove, either works. Add to a large mixing bowl. Soak in water for 10 to 15 minutes or until the water has turned murky. Preheat the oven to 400°F.

- Add the melted coconut oil, pumpkin spice, parsley, paprika, and white pepper. Mix together with your hands to coat the sweet potatoes in the oil and spices completely.

- Line a baking sheet with parchment paper. Transfer the sweet potatoes to the baking sheet and spread them out evenly.

- Bake for 20 minutes, then stir and flip fries to ensure even baking. Return to the oven and bake for another 20 minutes or until the sweet potatoes are soft, but crispy.

Recipe FAQ's
Excess moisture and starch can prevent baked fries from getting crispy. You can soak sweet potatoes in a bowl of water for about 15 minutes, until the water turns murky, to remove some of the starches. This can help achieve a crispier fry.
If you have extras, you can store in an airtight container in the fridge for a few days. You can reheat them by warming them back up the oven or air fryer on a warm setting or at 350°F.
