- Deli Turkey: I use organic deli turkey to make these quick and easy, you could also use chicken as well.
- Mozzarella: I always like to grate mozzarella myself as opposed to buying shredded cheese because it's free of caking agents.

- Yellow Bell Peppers: I use organic yellow bell peppers for some crunch and a little sweetness. You can use any color!
- Tortillas: You can use flour or corn, either works!

- Use flour or corn tortillas, either works.
- I use deli turkey as I make these for lunch often. But, if you want make them into a dinner, ground chicken, turkey, beef or pork also work if you want to cook up a pound of meat with 1 teaspoon of Italian seasoning. You could also use leftover Rosemary Meatballs Bites or Homemade Organic Italian Sausage as the protein!
- Use heirloom tomatoes, Roma, or even grape or cherry tomatoes. I've made these with all kinds, they're all delicious!
- You can drizzle your favorite Italian dressing on top in place of olive oil and vinegar if you prefer.

Step 1
In a skillet, add a tortillas one by one and heat until warmed.
Step 2
Once the tortillas are warmed, add the turkey, lettuce, mozzarella, bell pepper slices, tomatoes, and basil.
Step 3
Drizzle with the balsamic vinegar, extra virgin olive oil, and a sprinkle of salt and pepper (or your favorite balsamic dressing!).

- 4 slices deli turkey
- 3 pieces Romaine lettuce (chopped)
- 2 ounces mozzarella (grated)
- ½ yellow bell pepper (sliced)
- 3 slices tomato (halved)
- ¼ cup basil leaves (chopped)
- balsamic vinegar
- extra virgin olive oil
- salt and pepper to taste
- Parmesan (optional)
Instructions
