Ingredients

- Ham: I use Organic Prairie Bone In Half Ham that's fully cooked, making this recipe super easy!
- Spicy Brown Mustard: Use your favorite organic spicy brown mustard.
- Garlic: I used organic garlic cloves, but minced garlic works too!
- Parsley: Organic fresh parsley is optional, but I use this for serving as it makes it look pretty.
- Oranges: Same for oranges, totally optional, but it makes a beautiful presentation and I like a little fresh juice on my ham.

Baker's Tips
- Make sure the ham is fully thawed before baking; plan ahead (4–6 hours per pound in the fridge).
- Preheat your oven to 350°F before putting the ham in, to ensure even heating.
- Rub the spice-mustard mixture by hand to ensure it gets into all the crevices of the ham.
- If you want to use a large roasting pan instead of Dutch oven, you can do that too. You'll still just want to cover it with aluminum foil.
- Use an instant-read thermometer and pull the ham when its internal temp is around 140°F.
- Let the ham rest for a few minutes after baking before slicing — this helps the juices redistribute.
- If making ahead, you can reheat on the day of, but try to do minimal reheating so the ham stays moist.
How to Make Savory Mustard Herb Ham

- Make sure your Organic Prairie Ham is thawed. Preheat the oven to 350°F. Add the ham to a 5.5-quart Dutch oven or baking dish, cut side down. In a small dish, add the salt, pepper, parsley, and thyme and mix together. Set aside.

- In another small dish, add the spicy brown mustard, apple cider vinegar, and garlic cloves. Stir together. Add in the spices and stir together.

- Using your hands, rub the spice mix over the entire ham. Cover the ham with foil lightly. Bake for 45 minutes to 1 hour or until the internal temperature is 140°F.

- Remove foil and turn oven to 400°F and bake for an additional 10 to 15 minutes, to brown the ham.

Recipe FAQ's
You can thaw your frozen ham in the refrigerator. The Organic Prairie Hams are all 5 pounds, and it takes about 4 to 6 hours per pound to thaw in the fridge. So, if you do the math, that is 20 to 24 hours to thaw. You can even put it in the fridge two to three days in advance to be safe (incase your fridge is over crowded like mine always is!). This will ensure it is defrosted.
Yes, if you want to prep and bake this ahead of time and reheat it the day of, you can do that. But I would recommend just doing it the day of as it’s so easy! It only takes about an hour in the oven so it’s really easy to have fresh baked ham in no time at all!
Yes, you can definitely cook your ham in a slow cooker (as long as it fits!). Though it can take much longer in your slow cooker, about 4 to 6 hours if you're cooking on low. Or, about 2 to 3 hours if cooking on high. There's no worry of cooking it on high as these kinds of hams are fully cooked. Just ensure the internal temperature is 140°F.
What to Serve With Savory Mustard Herb Ham
- I love serving this ham with Roasted Cinnamon Sweet Potatoes With Pecans.
- If you're looking for a classic side, try Bone Broth Mashed Potatoes for a twist on a favorite.
- Fresh bread always goes great with this and it's also perfect for leftover ham as you can use it for sandwiches. I love Sourdough Irish Soda Bread or Lemon Rosemary Sourdough Bread with this savory ham!
- A side salad like Simple Green Salad with Homemade Dressing or Kale Apple Salad with Honey Dijon Dressing is perfect with this main dish.
Ways to Use Leftover Ham
- Make sure to save that ham bone and use it to make Ham Bone Soup.
- Use leftovers to make ham sandwiches.
- Add into mac and cheese along with veggies to make it into a meal.
- Add into Fluffy Scrambled Eggs With Sour Cream along with onions and bell peppers to make a scramble.

My favorite holiday ham, we make this for all the family gatherings!
Hi there.
Can I leave out the spicy brown mustard? I am not sure if I will like it.
Thanks,
Renee
hi Renee, the spicy brown mustard is what is holding together the other spices so if you leave it out, those spices won’t stick to the ham. If you don’t want a mustard herb ham like this, try my more classic Apple Cider Honey Baked Ham recipe here: https://mimisorganiceats.com/post/apple-cider-honey-baked-ham/
Hi Mimi,
the ham has to be sugar-free as my mom is prediabetic. i will just try the brown mustard.
Renee
Oh, okay I see, you can use anything else you do like that will allow the spices to stick to the ham. You could use EVOO.
Best recipe for baked ham. Was looking for a ketovore no sugar recipe and so glad I found this. Followed recipe exactly but used whole grain mustard. Don’t hesitate to try this. This is a keeper. Will never make ham any other way!
Aw, thank you so much Jennifer, I’m so glad you like this as much as we do!
