I love making these healthy Tomato Basil Soft Tacos for lunch or dinner. The best part about this recipe is that it's just adding things together — no cooking required!
In a skillet, add a tortillas one by one and heat until warmed.
Once the tortillas are warmed, add the turkey, lettuce, mozzarella, bell pepper slices, tomatoes, and basil.
Drizzle with the balsamic vinegar, extra virgin olive oil, and a sprinkle of salt and pepper (or your favorite balsamic dressing!)
Grate parmesan cheese on top (optional).

Tips
Use flour or corn tortillas, either works.
I use deli turkey as I make these for lunch often. But, if you want make them into a dinner, ground chicken, turkey, beef or pork also work if you want to cook up a pound of meat with 1 teaspoon of Italian seasoning.
Use heirloom tomatoes, Roma, or even grape or cherry tomatoes. I've made these with all kinds, they're all delicious!
You can drizzle your favorite Italian dressing on top in place of olive oil and vinegar if you prefer.
