Ingredients
Corn: Make sure you're buying organic corn, corn on the cobb or canned corn are fine, either will work!
Grape Tomatoes: I prefer Grape Tomatoes here over Cherry Tomatoes because they are meatier and don’t have as much moisture. Learn about The Difference Between Cherry and Grape Tomatoes. You can use Grape Tomatoes here if that’s all you have though!
Cucumber: Organic cucumbers give this salad a light and summery vibe and they contain magnesium, potassium and vitamins K, A and C.
Avocado: Organic avocados contain healthy fat.
Red Onion: I love organic red onion for it's distinct flavor. It's also loaded with health benefits like quercetin and sulfur compounds, red onion supports heart health and provides anti-inflammatory benefits.
Fresh Parsley: I use fresh organic parsley here for a lovely splash of fresh herbs. Parsley also has vitamin A, C, and K. It supports bone health, boosts the immune system, and provides antioxidant benefits.
EVOO: I love organic extra virgin olive oil for salads as it taste delicious and is an anti-inflammatory oil.
Step by Step Instructions
Step 1
If using leftover corn on the cob, cut off the corn from the cob. You can also use canned corn. Chop cherry tomatoes in half or quarters, depending on size.
Step 2
In a large bowl, add the corn, tomatoes, cucumber, avocado, red onion, and parsley.
Add olive oil, salt, and pepper. Toss to combine completely. Add in leftover meat like chicken or steak!
