Ingredients & Health Benefits
- Beef Broth: I use organic beef broth, my favorite is Kettle & Fire. Use code MIMIBAKESCOOKIES for 20% off. You could also use bone broth or vegetable broth too.
- Pumpkin: Organic pumpkin is a superfood! Itβs rich in fiber, vitamin A, potassium, antioxidants and more! Check out my past 10 Health Benefits of Eating Pumpkin.
- Pumpkin Spice: I use my Homemade Pumpkin Pie Spice.
- Garlic: You can use fresh garlic or organic minced garlic like I use here for ease. Garlic is anti-inflammatory and antimicrobial, so it has so many benefits for you!
- Salt and Pepper: For flavor!
- Cauliflower: Organic cauliflower is a cruciferous veggie which is great for gut health. Itβs also filling and pairs so well with the pumpkin spice in this stew.
- Onion: I use organic white onion in this recipe.
- Stew Meat: I use Organic Prairie Stew Meat, which is my favorite! Itβs cut and ready to just drop into your slow cooker. Their stew meat is pasture-raised so it has more omega-3s and antioxidants.
- Parsley: I garnish this with fresh parsley. Totally optional, but parsley has so many health benefits ranging from high nutrients like vitamin A, C, and K. It can promote bone health, cardiovascular health, and better skin.
Tools Needed
- Slow Cooker: I have the GreenPan Slow Cooker and love it! If you donβt have a slow cooker, you can do this in a Dutch oven over low heat on the stove.
