When it’s cold and snowy out, all I crave is warm and cozy meals. And this baked Lemon Pasta is an amazing cozy dinner that’s also very light. I combine organic pasta with feta, broccoli, and lemon for a light and easy dinner. If you like my Baked Feta Pasta recipe, you will love this one too!

I created this simple Lemon Pasta as I was gifted some lemons from a friend. I love getting fresh lemons during citrus season! And in this feta pasta, I use a little lemon zest to give it a light zesty flavor!

The lemon pairs so well with the broccoli and kale, making this simple lemon pasta recipe one that you’ll want to make over and over! This makes a good amount of pasta. So if you have a big family or are hosting guests, this is a great meal to make! I actually made this and gifted some to a friend who had a sick kid, so they had dinner, and Delaney and I were still able to enjoy some too!

Ingredients & Health Benefits

  • Noodles: I use organic Penne noodles. This organic pasta works great for this kind of dish, another similar noodle like a spiral would also work too.
  • EVOO: I use La Tourangelle Oragnic Extra Virgin Olive Oil, which is a healthy fat. Olive oil provides antioxidants, omega-3s, and is anti inflammatory.
  • Feta: I use Organic Valley Feta Cheese, which is my favorite. Always use block feta, not crumbled. While feta is a healthy cheese with protein and calcium, the crumbled feta can have added stabilizers or anti-caking agents, which are not ideal.
  • Spice Mix: I use Fresh Jax Organic Citrus Pepper Blend in this organic pasta dish for ease. This spice mix is so good and it makes it incredibly simple! If you don't have this, you could also use an Italian seasoning, which is not the same, but it's also delicious with this recipe.

Tools Needed

  • 3-Quart Pot: You'll need a 3-quart pot to boil the organic pasta.
  • Baking Dish: I use my Le Creuset baking dish, but any ceramic or even glass baking dish would work for this recipe.

Step by Step Instructions

Step 1

Preheat the oven to 400°F.

Step 2

In a 9 x 13-inch baking pan, add the olive oil and lemon pepper spice mix and whisk together. Add the block of feta in the middle of the baking pan. Add the broccoli around the feta and stir to coat completely in the olive oil.

Step 3

Bake for 35 to 40 minutes, or until the broccoli is cooked and cheese looks melty. (Be sure to check the Notes at the bottom of the recipe for high altitude baking instructions).

Step 4

While the feta is baking, cook noodles per the instructions on the box.

Step 5

Remove the feta from the oven and add in the cooked noodles and kale. Stir to combine completely, breaking the feta and letting it coat the noodles. Add salt and pepper to taste and zest with lemon.

FAQ's

Can I make this ahead of time?

This is a great meal to make ahead of time as it reheats very well. So, if you have to make it in advance, you can store it covered in the fridge and just warm it up for easy leftovers anytime!

Can I use another type of vegetable?

Of course, you can swap out the broccoli or kale for other veggies. For the broccoli, you could swap cherry tomatoes, zucchini, or mushrooms. And for the kale, you could use spinach instead.

Can I add meat?

If you want to add more protein to this meal you could add in chicken or my Homemade Italian Sausage. You could even use precooked chicken or Italian sausages.
