Ingredients

  • Apricots: I use frozen apricots, this is key for a thick smoothie. I just got apricots from my farm box and sliced them, added to a baking sheet and froze them. Once they are frozen, you can add to an airtight container and they won’t all clump together!
  • Watermelon Juice: Organic watermelon juice is going to give this smoothie a sweet and light flavor, it pairs so well with the apricots and raspberries.
  • Milk: I use organic coconut milk because it’s my favorite. But you can use cows milk, oat milk, almond milk or any other plant based milk you like.
  • Acerola Cherry Powder: This is my secret ingredient, I love adding Acerola cherry powder to smoothies as it brings a big boost of vitamin C. You can leave this out if you don’t have it.

Recipe FAQ’s

Are apricots and raspberries good together?

Yes, the combination of slightly tart raspberries and sweet apricots go so well together!

Is this smoothie naturally sweet?

Yes, it's sweetened naturally from real fruits and raw honey.

Can I use fresh fruit instead of frozen?

You can, but I don't recommend it. Frozen fruit is what will help give you a thick and creamy smoothie. Using fresh fruit will make it more watery. If need to use some fresh fruit, reduce the liquid and add in some ice cubes, this will help the mixture have a better texture and be thicker, like it should be.

What is acerola cherry powder used for?

Acerola cherry powder is a concentrated powder that's known for its high vitamin C content. The brand that I use has over 600% vitamin C per one scoop! I love adding it into smoothies for an extra immune system boost.

What does acerola cherry powder taste like?

This barely has a flavor, but it's mildly sweet, you won't notice it at all in this smoothie because it blends in well with the fruity flavors.

What can I use instead of acerola cherry powder?

If you don't have this, you can simply omit it. But, if you're looking for a similar vitamin C supplement, then camu camu powder has a similar amount of vitamin C and you can use that as well.

Can I make this smoothie without watermelon juice?

Absolutely! While watermelon juice gives this smoothie a light, refreshing sweetness, you can substitute orange juice, guava juice, apple juice, coconut water, or simply use additional milk. You will get a slightly different flavor, depending on what you use instead.

How can I make this smoothie higher in protein?

Yes! Feel free to add in your favorite collagen peptide powder or protein powder. You can also add in some plain Greek yogurt or even vanilla yogurt, add 1/2 cup to the smoothie for some extra protein, plus it will make it creamy!

Can I turn this into a smoothie bowl?

Yes, this makes a great smoothie bowl. Add your favorite granola on top, chia seeds, or coconut flakes for a delicious breakfast idea.

Can I make this smoothie ahead of time?

Smoothies are best enjoyed immediately after blending, but you can store leftovers in an airtight jar in the refrigerator for up to 24 hours. Give it a good shake or stir before drinking, as some separation is natural.

Can I freeze this smoothie?

Yes! Pour the blended smoothie into freezer-safe jars, silicone molds, or popsicle molds. Thaw slightly before enjoying, or blend again with a splash of milk if needed.
