This Turkey Avocado Brunch Bowl starts with my homemade Everything Bagel Turkey Breakfast Sausages. I add avocado, red pepper, cabbage, rice, coconut aminos and everything bagel spice mix for a simple and insanely delicious and easy brunch bowl!

Ingredients

  • Turkey Sausages: I use my Everything Bagel Turkey Breakfast Sausages in this recipe. But, any leftover breakfast sausage you have works. I've also made this with Homemade Pork Breakfast Sausage Patties too. And, I have also used deli lunch meat like ham and turkey as well.
  • Jasmin Rice: You can use leftover rice, which is what I always do when I make this! But, quinoa also works if you prefer.
  • Purple Cabbage: Organic cabbage adds a really nice crunch and texture to this bowl, you can use purple or green.
  • Red Pepper: I have these in my fridge as I usually eat them daily (so does John John!). I prefer the red peppers as they are the sweetest and I think the flavor pairs well here, but any color will work.
  • Avocado: This provides a creamy element to this bowl that is unmatched!
  • Coconut Aminos: I love organic coconut aminos because it tastes like soy sauce but without the soy! It provides a sweet umami flavor that is perfect with the rice!

  • Add onions, I love green onions or red onions with this too.
  • Swap the turkey sausages for pork sausages, leftover chicken, steak, or even use deli meat in its place.
  • Use leftover veggies in your fridge. Other veggies that are delicious include broccoli, cauliflower, kale, zucchini, onions and more.
  • Swap the rice for quinoa or sweet potatoes.
  • You can use soy sauce in place of coconut aminos.

How to Make a Turkey Avocado Brunch Bowl

  1. Add the rice and sausages to a bowl, and re-heat (if using leftovers), as you want the rice and suasages to be hot. You can re-heat in a microwave or in a skillet over the stovetop.

  1. Add the purple cabbage, red pepper, and avocado.

  1. Sprinkle the top with Everything Bagel Spice Mix and top with coconut aminos.

This makes an amazing brunch or lunch. Enjoy with Fluffy Scrambled Eggs With Sour Cream and Iced Blueberry Latte for the perfect protein packed breakfast that will fuel you all daylong.

Absolutely! If you want to add other veggies that sound good to you, go for it! The more veggies the better! Plus, if you’re making this recipe with leftovers, feel free to use what you have in your fridge.

How should I store leftovers?

If you're making rice and sausages just for this (like I do sometimes) store everything separately in airtight containers in the fridge. This is best as it allows you to then add in rice and sausage (to heat up) and then add in your cold veggies to mix in.
