I was craving granola last week, and when I asked Delaney which one he thought I should make he said Vanilla Cranberry Granola. I realized that this recipe wasn’t on my site, even though it’s an oldie but goodie.

This recipe for vegan granola is so good, you won’t even know it’s vegan. You can enjoy this Vanilla Cranberry Granola with milk or even with a vegan milk like almond or coconut. I actually just got some Three Trees Vanilla Bean Almond Milk, and we’ve been eating it with that and it’s so good!

This recipe for vegan granola uses corn syrup, but if you are not vegan, you can easily substitute that for honey instead. It’s delicious both ways, and I have made this Vanilla Cranberry Granola with both, just depending on what I have in my pantry. But, if you use honey it will have a honey flavor to it as well.

You could also use maple syrup here instead of corn syrup, but it will give the granola a maple flavor. Therefore, I use corn syrup in this recipe as it is very neutral flavor, allowing you to get a true vanilla bean flavor here.

Is homemade granola a healthy snack?

Homemade granola is a great healthy snack. You can enjoy it by the handful or you can eat it with milk, coconut milk, almond milk or even yogurt. I will usually eat granola for a snack even more so than I will for breakfast!

Is making granola cheaper than buying it?

Usually everything is cheaper if you make it yourself! Homemade granola can be much more cost effective, plus you get to choose your ingredients so you can easily make sure everything is organic!

What is a good binder for granola?

Organic light corn syrup, organic honey, and organic maple syrup are all great binders for granola. You can use whichever one you prefer in granola recipes. But, keep in mind that if you use honey or maple syrup, then your granola will have that flavor shining through. It woks great if you want that, but if you don’t want a honey or maple granola, then organic light corn syrup is your best option. I buy the Wholesome one which I really like.

What is the best way to store homemade granola?

First, let the granola cool completely and come to room temperature. Once it has cooled, you can store granola in an airtight container. This can be a Tupperware, a big Ziploc bag, or even a jar with a sealed lid. I actually will store my homemade granola in a Pyrex bowl with a lid (it’s the bowl that’s in these photos, and a lid just pops right on it!).

Why organic?

Why use organic ingredients in this recipe? You all know I’m a huge organic advocate, and I bet you may be thinking sometimes, Why would I even bother to use organic ingredients in something that is so sweet and indulgent? But, that is the exact reason why you should use organic ingredients! Sweet things need to have flavor in order to be good, otherwise they are just sweet and they don’t taste like much else. Organic ingredients are more pure than conventional ones, therefore they actually have more flavor than the non organic options. Say it with me, organic means more flavor! And not just more flavor but a more true and pure flavor. And organic ingredients are much healthier for you to eat in general as they do not contain GMOs or anything artificial. Plus, you are being environmentally friendly when you choose organic ingredients!

Vanilla Cranberry Granola

This simple homemade Vanilla Cranberry Granola makes a great breakfast or snack!


  • 347 grams (3 1/2 cups) organic rolled oats

  • 1 teaspoon organic ground vanilla bean

  • 113 grams organic cane sugar

  • 113 grams organic coconut toil

  • 1/2 cup water

  • 39 grams (2 tablespoons) organic light corn syrup

  • 1/2 teaspoon fine sea salt

  • 191 grams (1 1/2 cup) organic dried cranberries


  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • In a large mixing bowl, add the oats and vanilla bean and whisk together. Set aside.
  • In a small saucepan, add the cane sugar, coconut oil, water, and corn syrup. Cook on medium/high heat until everything is combined. Remove from heat and add in the sea salt. Stir to combine completely. Pour the sugar mixture over the oat mixture and fold to combine and completely coat the oats.
  • Transfer to the prepared baking sheet and spread out as evenly as possible. Bake for 25 minutes, remove from the oven and stir to rotate granola. Bake again for 25 minutes or until golden brown. Let cool completely on the baking sheet.
  • Once cool, add granola and cranberries to a large mixing bowl. Mix to combine completely.
  • Store in an airtight container for up to 1 month.


  • Gluten Free – Use gluten free oats.
  • High Altitude – Bake at 325°F for 20 minutes, remove from oven and stir to rotate granola. Bake again for 20 minutes or until golden brown.
