- Coconut Oil: I use organic coconut.
- Corn Syrup: I use organic light corn syrup, because this is vegan. If you are not vegan, you can also use honey it its place if you don't want to use corn syrup.
- Cane Sugar: I use a little organic cane sugar for sweetener.
- Vanilla Bean: I use organic ground vanilla bean, which really gives this granola the ultimate vanilla flavor.
- Dried Cranberries: I add in organic dried cranberries. But you can also use dried blueberries or raisins too!


Tools Needed
- Scale: Always use a digital food scale for the best results.
- Small Pot: You'll need a small pot to melt the sugar and coconut oil.
- Mixing Bowl: I use a large mixing bowl to mix the granola together.
- Baking Sheet: You'll need a half sheet pan to bake the granola.
- Parchment Paper: I always use parchment paper whenever baking granola, this helps so much so it can easily be removed and broken up into clusters.

Step by Step Instructions
Step 1
Preheat the oven to 325°F. Line a baking sheet with parchment paper.
Step 2
In a large mixing bowl, add the oats and vanilla bean and whisk together. Set aside.
In a small saucepan, add the cane sugar, coconut oil, water, and corn syrup. Cook on medium/high heat until everything is combined. Remove from heat and add in the sea salt. Stir to combine completely. Pour the sugar mixture over the oat mixture and fold to combine and completely coat the oats.




Step 3
Transfer to the prepared baking sheet and spread out as evenly as possible. Bake for 25 minutes, remove from the oven and stir to rotate granola. Bake again for 25 minutes or until golden brown. Let cool completely on the baking sheet.
Step 4
Once cool, add granola and cranberries to a large mixing bowl. Mix to combine completely.

Flavor Variations
- Classic Raisin: Add in raisins instead of cranberries.
- Blueberry Almond: Add in dried blueberries and almonds in place of cranberries.
- Vanilla Strawberry: Add in freeze dried (or dried) strawberries in place of cranberries.
- Chocolate Chip: Add in chocolate chips in place of cranberries.

Homemade granola is a great healthy snack. You can enjoy it by the handful or you can eat it with milk, coconut milk, almond milk or even yogurt. I will usually eat granola for a snack even more so than I will for breakfast!
Usually everything is cheaper if you make it yourself! Homemade granola can be much more cost effective, plus you get to choose your ingredients so you can easily make sure everything is organic!
Organic light corn syrup, organic honey, and organic maple syrup are all great binders for granola. You can use whichever one you prefer in granola recipes. But, keep in mind that if you use honey or maple syrup, then your granola will have that flavor shining through. It woks great if you want that, but if you don’t want a honey or maple granola, then organic light corn syrup is your best option. I buy the Wholesome one which I really like.
First, let the granola cool completely and come to room temperature. Once it has cooled, you can store granola in an airtight container. This can be a Tupperware, a big Ziploc bag, or even a jar with a sealed lid. I actually will store my homemade granola in a Pyrex bowl with a lid (it’s the bowl that’s in these photos, and a lid just pops right on it!).
