  • Frozen Blueberries: I use organic frozen blueberries for ease, so this blueberry smoothie can be made year round. But, using frozen blueberries also ensures a thicker smoothie than using fresh. If you want to use other berries like strawberries, blackberries or raspberries in place of blueberries, that also works too for a different, but equally delicious, flavor.
  • Frozen Mango: I also use organic frozen mango as this will help thicken this Lemon Blueberry Smoothie.
  • Coconut Milk: I use organic coconut milk as I love the sweet flavor it brings. It also makes this organic smoothie vegan. You can also use regular milk, almond milk, oat milk or whatever your milk preferences are.
  • Lemon: I use fresh lemon juice and zest for the most flavor. You can also use Meyer lemons if you prefer! If you don’t have a lemon, you can use lemon juice from a bottle, but the fresh lemon zest really brings more flavor to this Lemon Blueberry Smoothie.

Tips For a Thick Lemon Blueberry Smoothie

  • Depending on the size of your lemon, you may need more or less coconut milk to get your desired consistency.
  • If you like thick smoothies, like me, start with the 1/2 cup of coconut milk first and go from there before adding the additional 2 tablespoons.
  • If you like really thick smoothies, be sure to use a blender tamper before adding more liquid as this will ensure it’s blended up well.
  • If you want a thinner smoothie, just add a little more coconut milk to get your desired consistency.
  • If you don’t have mango you can also use a banana in its place, it does not have to be frozen. Banana is a great thickener for smoothies.
  • If you want to add protein, you can add a scoop of your favorite protein powder. Though, I prefer using organic collagen for natural protein and no weird ingredients! Or you can also add hemp seeds which also have natural protein.
  • If you want to make this into a smoothie bowl with granola, you can also add in 1/2 cup of vanilla yogurt into the smoothie for more volume. And try adding Honey Almond Coconut Granola on top!

  1. Add the blueberries, mango, and 1/2 cup coconut milk (to start if you prefer thick smoothies) to a high powered blender. Zest the lemon into the blender, then juice the lemon and add the juice into the blender.

Yes, while these ingredients are delicious on their own when they come together it's a magical burst of fresh berry and zesty lemon that compliment each other perfectly!

What does a lemon blueberry smoothie taste like?

This tastes almost like a frozen blueberry lemonade. It has a sweet blueberry flavor that is paired with a tart lemon, which makes such a good combination of sweet and tart.

Why use mango instead of banana in smoothies?

Mango is a great thickener for smoothies with a more neutral sweetness than banana. Especially if you aren't a huge banana fan (some people are not) the frozen mango is a great replacement as it still makes smoothies creamy without a banana flavor.

How to thicken a vegan smoothie?

I use frozen mango and coconut milk to thicken this vegan smoothie. I also do less liquid at first, this will help you get the right thickness that you desire without adding too much. This is a crucial step whenever making thick smoothies as you can't remove liquid, but you can always add more. So, start with less at first. Blend and use a blender tamper, as this will help blend without adding more liquid. Then decide if you need more.

How do I make smoothies thicker without yogurt?

We're using frozen mango and frozen blueberries to thicken this smoothie. Using frozen fruit, as opposed to fresh, will thicken a smoothie much more. And, mango is a great thickener for smoothies so you don't need to add yogurt here. But, if you want an even creamier smoothie, you can add in some yogurt (regular or nondairy) too.

Can I turn this into a smoothie bowl?

Yes, I recommend adding some yogurt if you want to turn it into a smoothie bowl as this will give you some more volume. You can add in 1/2 cup to 1 cup of yogurt, depending on your preference. You can also top it with some granola for a delicious smoothie bowl.

Why is my smoothie too thin?

If you added too much milk, the smoothie can be too thin. This can happen if you think it's not blending up and you add more liquid. This is why a blender tamper is super helpful if you like really thick smoothies, like me. If you don't have a blender tamper, a spatula works just as well.

What milk works best in blueberry smoothies?

I prefer to use either coconut milk (which is my favorite) or whole milk as I like the creaminess that both of these milks bring to smoothies. While almond milk, oat milk, or another nut milk like pistachio or cashew also work, I find these can be a bit more watered down and don't make this as creamy as it can be.

Is this smoothie good for breakfast?

This smoothie doesn't have any protein in it, so if I'm having it for breakfast it's usually alongside breakfast sausages, eggs, or a bagel because I also need protein! You can also add in your favorite protein powder, collagen, or hemp seeds for additional protein if you want to have it alone or make it into a smoothie bowl. It's a refreshing fruity smoothie that can really wake you up in the morning.

Can I add protein powder?

Yes, you can add in your favorite protein powder. Though, I always prefer to just use organic collagen instead as it's a single ingredient protein option with no weird stuff that is completely tasteless in the smoothie! I also like hemp seeds as well as they also have added protein.

Can I freeze smoothie ingredients ahead of time?

Yes, you should have the fruit frozen before making the smoothie as this will help get you a thick smoothie.
