Why You'll Love This Recipe
- 15 Minutes: I love this recipe as it's a 15 minute air fryer garlic bread recipe from start to finish. Which is why I love quick air fryer recipes that take less time.
- So Damn Good: This is so good! It's one of my favorite quick, easy, and delicious lunches. Organic bread with garlic, melty cheese, roasted veggies, there really is nothing better!
- Uses Leftovers: The best part is you can mix it up with whatever veggies or protein you have in your fridge so it's a great recipe for leftovers, air fry and it's ready to enjoy!
- Healthy-ish: I'm a big fan of healthy-ish recipes and this one checks all the boxes. While this may look like an indulgent recipe with it's golden brown goodness, it has fresh veggies, protein, and carbs all in one!
Ingredients

- Sourdough Bread: I usually use sourdough for this, homemade or store bought works. You can also use my Organic French Baguettes With Instant Yeast. You can also use French bread, ciabatta, or Texas toast too.
- Salted Butter: You have to have butter for garlic bread, it's just a must. I use salted butter, always! But, if you prefer unsalted butter you can use that too. Just don't use margarine, it won't have the best flavor.
- Fresh Garlic Cloves: Make sure you have the good stuff here. Buy fresh organic garlic cloves. It only takes a couple, but this is where the flavor comes from.
- Mozzarella Cheese: You can buy the block or the shredded, either one is fine. I always prefer to buy the block and grate it myself, as the shredded cheeses have stabilizers in them (yes, even the organic ones) and sometimes they upset my stomach. So, if you've noticed that, try buying block instead and see if it makes a difference, as I know it does for me.
- Fresh Basil: This just gives it a little something extra. I love adding fresh herbs, especially basil! You could also use other herbs like fresh parsley or rosemary and those would be delicious too.

Additional Topping Ideas
You can also switch it up for different toppings to load up your cheesy garlic bread with whatever you love. This is a super easy and adaptable recipe that you can make your own with simple ingredients! Try these substitutions or additional toppings:
- Bell peppers
- Mushrooms
- Black olives
- Spinach
- Parsley, oregano, dried parsley, rosemary
- Parmesan cheese
- Red pepper chili flakes for some heat
- Homemade Organic Hot Honey
Baker's Tips
- If you want to use a homemade garlic butter that's already made, you can do that instead and just spread the softened butter onto the bread slices. Try it with Homemade Garlic Herb Butter.
- I use my air fryer for this recipe, as it is similar to a toaster oven so I can set the breads right inside the air fryer basket. You can also use a toaster oven or your regular oven if you re making a lot for a party! If you are using your oven, just use a cookie sheet (no foil) and you'll be all set.
- If your bread is very large or you're doing super thick slices, you may need more butter and garlic if it isn't covering all of it, don't be afraid to add more to coat the bread completely.
- Make sure to check your bread while its cooking as all air fryers and ovens are a little different. This bakes up quick! So, it can burn easily if not being watched.
- If you are making a big batch with many slices, you can bake them all together on a baking sheet in the regular oven too.
- Adding some fresh parmesan on top would also be amazing! Or you can even dip it in marinara sauce too!
How to Make Air Fryer Loaded Garlic Bread
Step 1
On a piece of foil, place the two pieces of sourdough bread.
Step 2
In a small bowl melt the butter (I just used microwave for 30 seconds). Add the minced garlic to the melted butter. Using a pastry brush, brush the breads with the garlic and butter mixture.
Step 3
Add mozzarella cheese onto the breads, reserving about ¼ of the cheese for the top. Slice the tomato and add onto each bread. Top with the sliced summer sausage, red onion, and the remaining cheese.
Step 4
Place in your air fryer at 400°F for 5 to 10 minutes, or until the cheese is melty, lightly browned and the bread is crispy. Top with fresh basil.

Serving Ideas
I love this on its own for a light lunch, but it's also a great dinner with a little something more. Try it with:
- Simple Green Salad with Homemade Dressing makes this into a filling meal!
- Pair it with Rosemary Meatball Bites for an easy side dish.
- Serve with Lemon Herb French Fries, Garlic Lemon Sweet Potato Fries, or Organic Dill Dip With Sour Cream for a game day snack spread!
- This makes a perfect side dish to soup, try it with tomato soup, Meyer Lemon Chicken Wild Rice Soup, Ham Bone Soup, or Healthy Beef Soup With Leeks.
