  • Spices: I use a mix of organic dried thyme, sage, fennel seeds, marjoram, nutmeg, black pepper, and salt.
  • Oil: This is optional, but you can use a little avocado oil or EVOO if you are cooking with stainless steel where you need oil. But, I usually don't need oil in my nonstick skillet.

  • You can form these into any size or shape you like. You can do links or even do thinner patties if you are wanting to make breakfast sandwiches.
  • You can freeze these as well after they are cooked and cooled. Simply add to a freezer safe container or zip bag. Reheat in the toaster oven, air fryer or skillet just like you would store bought freezer sausage!

  1. In a medium bowl, add the sea salt, sage, thyme, pepper, fennel seed marjoram, and nutmeg. Mix together to combine.

  1. Add the ground pork and, using your hands, combine the meat with the spices until it is uniform. Form the meat into 6 to 8 patties, weighing about 2 ounces each. They should be a little more than 3-inches in diameter.

  1. In a large skillet on medium/high heat, add the avocado oil. Add four patties and cook for about 2 to 3 minutes on each side, until done. Repeat with the remaining patties.

Yes, you can make different size patties. We do this sometimes when we make breakfast sandwiches, as we want them to be thinner and larger. In this case, we’ll form each 2-ounce patty into a disk that is almost 6-inches in diameter. You can also make these into links as well if you prefer.

How to store homemade breakfast sausage?

If you do not eat all patties at once, then store them in an airtight container in the fridge. They will keep for up to 5 days in the fridge. You can reheat them the following morning by either microwaving for about 45 seconds, or you can fry it up in a pan, or heat it in a toaster oven or air fryer.

How to freeze homemade breakfast sausage?

Once made and cooled, place a freezer safe bag or container. You can reheat in the toaster oven or a skillet.
