Equipment

  • Mixing Bowl
  • Cast Iron Skillet

Ingredients

  • 1 teaspoon fine sea salt
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • ¾ teaspoon black pepper
  • ½ teaspoon fennel seed
  • ¼ teaspoon marjoram
  • teaspoon ground nutmeg
  • 1 pound ground pork
  • 2 tablespoons avocado oil (optional)

Instructions

  • In a medium bowl, add the sea salt, sage, thyme, pepper, fennel seed marjoram, and nutmeg. Mix together to combine.
  • Add the ground pork and, using your hands, combine the meat with the spices until it is uniform. Form the meat into 6 to 8 patties, weighing about 2 ounces each. They should be a little more than 3-inches in diameter.
  • In a large skillet on medium/high heat, add the avocado oil. Add four patties and cook for about 2 to 3 minutes on each side, until done. Repeat with the remaining patties.
  • Serve immediately or store in an airtight container in the fridge.

Notes

Tips
  • While this recipe is for ground pork, you could use ground turkey if you prefer!
  • You can form these into any size or shape you like. You can do links or even do thinner patties if you are wanting to make breakfast sandwiches.
  • You can freeze these as well after they are cooked and cooled. Simply add to a freezer safe container or zip bag. Reheat in the toaster oven, air fryer or skillet just like you would store bought freezer sausage!
