In a medium bowl, add the sea salt, sage, thyme, pepper, fennel seed marjoram, and nutmeg. Mix together to combine.
Add the ground pork and, using your hands, combine the meat with the spices until it is uniform. Form the meat into 6 to 8 patties, weighing about 2 ounces each. They should be a little more than 3-inches in diameter.
In a large skillet on medium/high heat, add the avocado oil. Add four patties and cook for about 2 to 3 minutes on each side, until done. Repeat with the remaining patties.
Serve immediately or store in an airtight container in the fridge.

Tips
While this recipe is for ground pork, you could use ground turkey if you prefer!
You can form these into any size or shape you like. You can do links or even do thinner patties if you are wanting to make breakfast sandwiches.
You can freeze these as well after they are cooked and cooled. Simply add to a freezer safe container or zip bag. Reheat in the toaster oven, air fryer or skillet just like you would store bought freezer sausage!
