Try this easy simple Green Salad with homemade dressing. Enjoy as a side salad to your favorite meal, or you can add in chicken or steak for a healthy lunch!

Ingredients
  

  • 2 cups mixed greens
  • ½ green bell pepper (diced)
  • ½ avocado avocado (diced)
  • ¼ cup cucumbers or pickles (diced)
  • 2 stalks celery (chopped)
  • 2 tablespoons roasted and salted pumpkin seeds
  • 2 tablespoons roasted salted shelled pistachios
  • 2 green onions (chopped)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon FreshJax Organic Citrus Pepper Blend

Instructions
 

  • In a large bowl, add the mixed greens, bell pepper, avocado, cucumbers (or pickles), celery, pumpkin seeds, and pistachios.
  • Drizzle olive oil and balsamic vinegar over the top and sprinkle with the citrus pepper seasoning and stir together.

Notes

Tips
  • Use any kind of lettuce you like. While I'm using a spring mix, you can also use spinach, kale, romaine, or iceberg.
  • Feel free to swap veggies for things you have in you fridge. While I'm using all green to keep with the theme, you can definitely mix it up!
  • You can also use sauerkraut in place of pickles for a very similar flavor!
  • I'm using FreshJax Organic Citrus Pepper Blend here for a very light and bright flavor, but you can use your favorite seasoning. Another one of my favorites is everything bagel seasoning!
