What is flatbread pizza?
Flatbread pizza is a pizza with dough that is made without any leavening. Because it has no leavening, it won't rise and it is very flat. Hence the name, flatbread pizza!
Making delicious flatbread pizza is much easier easier than traditional pizza because it takes way less time and there is no worry if your dough doesn't rise because it doesn't need to! I love making flatbread pizza as it's a quick and easy way to make homemade pizza that's ready in under an hour.
Ingredients

- All Purpose Flour: This flatbread pizza dough
- EVOO: I use organic extra virgin olive oil for the best flavor.
- Cornmeal: Organic cornmeal will help prevent this from sticking to the baking sheet as it bakes. If you are using parchment paper you can skip this.

Baker's Tips
- Weigh ingredients for the best results.
- If you don't have olive oil, avocado oil will also work.
- If you want to make this ahead of time, you can store it in an airtight container in the fridge for up to 2 days.
- It's key to bake the pizza before adding the toppings, this ensure that the crust is crispy and not soggy.
- If you want to divide the dough into two portions, you can make individual flatbreads.
Topping Ideas
- Supreme: Marinara sauce, mozzarella, pepperoni, Homemade Organic Italian Sausage, red onion, green bell peppers, black olives.
- Veggie: Marinara sauce, mozzarella, mushrooms, bell peppers, red onions.
- BBQ Veggie: BBQ sauce, mozzarella, tomato, green peppers, red onion.
- Tomato Basil: Tomato sauce, mozzarella, fresh tomatoes, fresh basil.
- Thai Chicken: Peanut sauce, Monterrey jack cheese, shredded chicken, carrots, red onion, red bell peppers, bean sprouts, cilantro.
- Greek: Brush the crust with olive oil, fresh garlic and a sprinkle of dried oregano, mozzarella, tomato, red onion, kalamata olives, top with feta.
How to Make Quick Homemade Flatbread Pizza Dough (No Yeast)

- In a large mixing bowl, add the flour, sea salt, olive oil, and water.

- Mix together with your hands until a shaggy dough forms. Allow the dough ball to rest for 5 to 10 minutes, this helps the gluten relax, preventing stickiness, making it easier to work with.

- Preheat the oven to 450°F. Line a baking sheet with parchment paper and sprinkle with cornmeal (optional).

- Lightly flour a work surface. Turn the dough onto the work surface and lightly flour. Roll out with a rolling pin long and thin, about 15-inches long and it should be 1/8 to 1/4-inch thick and transfer to the baking sheet. Using a fork, poke the dough with holes everywhere.

- Drizzle the dough with olive oil and use the back of a spoon to spread it evenly. Bake the dough alone for 13 to 15 minutes, until it looks dry. Remove from the oven.

- Add your favorite pizza toppings such as marinara sauce, cheese, veggies, or pepperonis. Return to the oven and bake for another 13 to 15 minutes, until the cheese is lightly browned. Slice into wedges and it's ready to enjoy!
Quick Homemade Flatbread Pizza Dough (No Yeast) FAQ's
Yes, if you want to make this ahead of time you can do so and store in an airtight container in the fridge for up to 2 days.
Yes! If you have a pizza oven and prefer to make this in your pizza oven you can definitely do that. I haven't tested the time in my own pizza oven yet, but it will be shorter as pizza ovens are much hotter so the pizza cooks much faster.
Yes, you can divide the dough into 2 if you want to make 2 smaller flatbread pizzas that are individual.
The dough should be thin, 1/8 to 1/4-inch.
Use a high temperature like I do here, 450°F. And partially baking the crust will help with this, which is why I do that here.
This helps ensure the crust is baked enough before the cheese goes on. This helps ensure you have a crispy crust that is now raw or doughy.
This can cause the pizza to become doughy, especially in the center.
If you skipped par-baking, this is what will happen.
If you bake it too low, it can become hard instead of crispy.
Yep, if you want to meal prep you can freeze both the dough and crust if you want. For the dough, freeze in a freezer safe bag. Thaw and then continue with the recipe. If you want to freeze a pre-made crust, you can par-bake the crust. Then, let it come to room temperature before wrapping in plastic wrap or storing in a freezer safe bag. Freeze it for up to 3 months. You can just thaw and it's ready to just top with your favorite toppings and bake off.
Serving Ideas
- Make a Simple Green Salad With Homemade Dressing or Kale Apple Salad with Honey Dijon Dressing as a side.
- Serve Lemon Herb French Fries or Garlic Lemon Sweet Potato Fries as an appetizer or side.

- Enjoy as an appetizer to a main dish like Mushroom Zucchini Baked Pasta, Butter Parmesan Pasta With Italian Sausage or Baked Butter Lemon Pasta Without Cheese.
