This Butter Parmesan Pasta is an ode to childhood when your mom would make you just plain noodles with butter and parmesan. I took this up a notch with my Homemade Italian Sausage and fresh basil so you have a meal the whole family will love!

Butter Noodles was a common request in our house. Basically noodles with butter and parmesan (and of course salt in my case). It was a comfort food, if we weren't feeling too well, or if we were upset my mom would offer us Butter Noodles as a peace offering. This was something she wouldn't normally give us as a meal — all carbs, no protein, and no veggies, haha. We had very balanced meals in my house on a daily basis. So, Butter Noodles were a delicious treat.

So now that I am an adult, I make my own version of Butter Noodles, which is this super easy Butter Parmesan Pasta recipe. I've elevated my childhood noodles with Homemade Italian Sausage, mushrooms, onions, and spinach. This makes for a balanced meal, but still nostalgic pasta, that I can feel good about eating!

Delaney I make a some version of this regularly in our house. Sometimes we mix it up with different veggies like bell peppers, zucchini, squash, red onion, broccoli — you can use any mix of veggies you like. I've tried them all, and they are all delicious in this recipe! That makes this recipe super flexible as you can use what you have in your fridge, which is usually what I do!

Ingredients & Health Benefits

Butter: My favorite is Organic Valley Salted Butter.

Penne Noodles: You can use organic Penne noodles or any kind you like.

Italian Sausage: You'll need organic ground pork to make Homemade Italian Sausage for this recipe. You can also buy this if you prefer, but there's no organic version on the market right now, which is why I make it!

Mushrooms: I use organic baby Bella mushrooms here, they have potassium and vitamin D and promote gut health.

Yellow Onion: Organic yellow onions have tons of antioxidants. You can use white or red if you prefer though.

Spinach: I use spinach here, but kale is also a great substitute if you don't have spinach. Organic spinach is a dark leafy green that support your immune system and digestive health.

Parmesan: I prefer to buy block parmesan and grate it myself. Read my post 5 Reasons to Grate Your Own Cheese for more info.

Salt and Pepper: Key for all pasta!

Step by Step Instructions

Step 1

Cook the noodles per the instructions on the package, drain, and set aside. While the noodles are cooking, cook sausage and veggies.

Step 2

In a large skillet, add the sausage and cook over medium heat until it starts to cook through and lightly brown. Turn heat up to medium/high and brown and continue to cook until done. Remove from heat and set aside.

Step 3

In a large skillet, add the butter and onions. Cook over medium heat until onions are translucent, add the mushrooms and continue to cook until lightly browned.

Step 4

In large serving dish, add the noodles, sausage, onions and mushrooms and toss completely.

Step 5

To serve: Place a bed of spinach in each bowl, add hot pasta on top, 1 to 2 tablespoons of butter, and stir. The hot pasta will cook the spinach as you stir and combine the butter. Grate fresh parmesan on top and salt and pepper to taste.

Yes, feel free to use any kind of noodles you like.

Can I make this gluten free?

Yes, just use your favorite gluten free pasta. I really like the organic chickpea pasta!

  • 1 pound mushrooms (sliced)

For Serving

  • salt and pepper

Gluten Free — Use gluten free noodles. My favorite is Food to Live Organic Chickpea Pasta as it just has one ingredient.
