Step by Step Instructions
Step 1
Allow pork chops to come to room temperature. In a small dish, add the ground mustard, salt and pepper and mix together.
Step 2
Pat dry pork chops. Add ½ teaspoon of honey onto each side and rub in. Sprinkle each side with the ground mustard seasoning.
In a large skillet over medium heat. Add the olive oil to coat the pan. Cook pork chops about 3 minutes per side until golden brown and internal temperature is 145°F. Let rest for 3 minutes before serving.
Step 3
Serve pork chops with coleslaw or anything you'd like.

You want pork chops to be room temperature before cooking because this allows for even cooking of the meat. If they are cold, the inside could be the right temperature and the outside could be overcooked.
You always want to pat dry pork chops before cooking. This will help the meat sear when you place in the skillet or on the grill. If the pork is wet, the it will steam, which is not ideal and won't provide that char and flavor you want with a pork chop!
It's best to let pork chops rest after cooking so that the moisture can redistribute throughout the meat. If you cut into it too soon, then the juices will run out and this can result in a dry pork chop.
