I am so excited to stat of 2023 with this recipe! I created this recipe for my friends at Organic Prairie last fall, and it is one of my absolute favorite recipes from last year! I have made this recipe for Pork & Peppers Lettuce Cups so many times!

How to Make Pork & Peppers Lettuce Cups
Step 1
These easy ground pork lettuce cups start out by adding some simple spices to Organic Prairie Ground Pork. I use Chinese Five Spice, sea salt, black pepper, garlic powder, and marjoram. If you’re unfamiliar with Chinese Five Spice or marjoram, they are very common, and you can find them at your local grocery store! They really bring a delicious and interesting flavor to this recipe, trust me, go get them and expand your spice cabinet! The spices are mixed into the ground pork and it’s easy to do this with your hands!


Step 2
Once the spices are mixed into the ground pork, then I cook the peppers and onions with some Organic Valley Ghee. If you don’t have Ghee you can use butter or even olive oil in its place.
This only takes a few minutes to sauté them in a large skillet. Then I add the ground pork to the skillet and cook that as well. This takes another 10 or so minutes until it’s cooked, then I brown it for a few additional minutes.


Step 3
Once pork and peppers are cooked, you just have to get the lettuce cups washed and the scallions chopped. Then, add the pork and peppers into the lettuce cups and top with scallions.



Step 4
Serve and enjoy these amazing ground pork lettuce cups. If you have extras you can store the pork and peppers in an airtight container in the fridge and reheat for a snack or dinner the next day.

Frontier Co-Op Organic Chinese Five Spice
Frontier Co-Op Table Grind Sea Salt
Frontier Co-Op Organic Black Pepper
Frontier Co-Op Organic Garlic Powder
Organic Yellow Onion
O Organics Mini Sweet Bell Peppers (from Vons, they come in a bag in the produce section)
Organic Living Butter Lettuce (though you could use Romaine if you need to)

Pork & Peppers Lettuce Cups

Ingredients
1 pound Organic Prairie Ground Pork
1 teaspoon organic Chinese Five Spice
1 teaspoon fine sea salt
3/4 teaspoon organic black pepper
1/2 teaspoon organic garlic powder
1/2 teaspoon organic marjoram
2 tablespoons Organic Valley Ghee
1 cup organic diced yellow onion
1 cup organic sliced mini sweet bell peppers (about 8 peppers)
organic living butter lettuce
2 organic scallions, sliced
Directions
- In a large bowl, season the pork with the Chinese Five Spice, salt, pepper, garlic powder, and marjoram. Mix with your hands to combine completely. Set aside.
- In a large skillet, add the ghee, yellow onion, and peppers. Sauté over medium/high heat, for 1 to 2 minutes.
- Add in the ground pork. Continue to cook on medium until the pork is browned, and fully cooked, about 10 minutes. Turn heat to high and brown for another 3 to 5 minutes.
- To serve, place lettuce cups on a serving board. Add the pork into lettuce cups and top with scallions.
