I am so excited to stat of 2023 with this recipe! I created this recipe for my friends at Organic Prairie last fall, and it is one of my absolute favorite recipes from last year! We have made this recipe for Pork and Peppers Lettuce Cups so many times!

Ingredients & Health Benefits
- Ground Pork: I use Organic Prairie Ground Pork which is pasture raised.
- Ghee: You can use Organic Valley Ghee or butter, whichever you prefer.
- Spices: The main spice I'm using is Frontier Co-Op Organic Chinese Five Spice, which gives these lettuce cups so much flavor! I use McCormick’s Organic Marjoram, Frontier Co-Op Organic Garlic Powder, and salt and pepper.
- Onion: I'm using organic yellow onion, which has loads of antioxidants and it gives this dish great flavor.
- Mini Bell Peppers: I use organic mini bell peppers, you can use regular size if you prefer though. Bell peppers have lots of vitamin C, antioxidants, fiber and more.
- Lettuce: I use organic living butter lettuce for the cups. This is the best kind to use for lettuce cups as it's naturally round and cup-like. Living butter lettuce has vitamin A, C, K, folate and more.

Tools Needed
- Mixing Bowl: You'll need a mixing bowl to mix up the pork and spices.
- Skillet: You'll need a large skillet, you can use a cast iron or your favorite large skillet.

Step by Step Instructions
Step 1
In a large bowl, season the pork with the Chinese Five Spice, salt, pepper, garlic powder, and marjoram. Mix with your hands to combine completely. Set aside.



Step 2
In a large skillet, add the ghee, yellow onion, and peppers. Sauté over medium/high heat, for 1 to 2 minutes.
Step 3
Add in the ground pork. Continue to cook on medium until the pork is browned, and fully cooked, about 10 minutes. Turn heat to high and brown for another 3 to 5 minutes.



Step 4
To serve, place lettuce cups on a serving board. Add the pork into lettuce cups and top with scallions.

Serve with rice or quinoa for a more complete and heartier meal. You can also serve these as an appetizer.

- 1 cup sliced mini sweet bell peppers (about 8 mini peppers)
- 1 head butter lettuce
- 2 scallions (sliced)
Instructions
