Step by Step Instructions
Step 1
In a small bowl, add the poultry seasoning, fine sea salt, black pepper, and thyme and mix together. Set aside. Add the olive oil to another small bowl, set aside.
Cut bell peppers into 2-inch squares. Trim the stems off the mushrooms. Cut the onion in quarters, reserving the large pieces. Cut the chicken into 2-inch cubes.
Step 2
To make the kabobs: Start with a pepper, add onion, chicken, mushroom, and pepper. Repeat until all the chicken and veggies have been skewered. You should have about 3 to 4 pieces of chicken per kabob and about 8 kabobs total. A tip for the ends of the chicken breast where it’s thin, fold it over to create a larger chunk!
Using a pastry brush, brush olive oil on the kabobs, making sure to rotate to brush each side. Sprinkle the spice mix on top and rotate to season each side.
Step 3
Heat grill to high, about 350°F to 400°F. Place kabobs on the grill and cover. Cook for about 3 minutes, rotate, and continue to do that until all sides have been grilled. Heat until internal temperature is 165°F. (Alternatively if you’re not grilling, preheat the oven to 400°F. Heat a cast iron skillet to medium/high. Add kabobs and sear each side. Transfer to the oven and cook for 8 to 10 minutes, until internal temperature is 165°F.)
Step 4
Serve immediately with BBQ or dipping sauce, if desired.

No! You can easily make this healthy chicken kabob recipe on the grill. But you do not need one. I provide instructions for making this recipe inside in your cast iron skillet and oven.
Yes! If you want to use different vegetables you can. Zucchini or squash would be really good with these, and so would grape tomatoes!
You can serve these with rice, quinoa, homemade bread like my Simple French Baguettes, or even chips or pretzels if you are having a BBQ!
My favorite, and what I like to eat these with is the Kinder’s Organic Mild BBQ Sauce. You can serve them with any BBQ sauce you like, but this is my fave!
