Ingredients

- Butter: Use a high quality organic salted butter. If you want to use unsalted, just add 1/4 teaspoon salt to the recipe. Check out Best Salted Butter for Baking for more info on butter.
- Grassfed Collagen: I’m using NuNaturals Organic Grassfed Collagen. This adds protein to these protein cookies without protein powder!
- Lemon: I use fresh lemon zest as well as lemon flavor. This gives these cookies both a sweet and zesty flavor.
- Blueberries: I use organic dried blueberries for juicy blueberries on every bite. Don’t substitute for fresh as these have much more moisture than dried.
- All Purpose Flour: I use organic all purpose flour, but if you prefer to use a whole-wheat flour, you can do that too.

Easy Substitutions
- You can use unsalted butter if you prefer, just add 1/4 teaspoon of salt to the recipe.
- If you don’t have dried blueberries, you can use dried cranberries in their place.
- If you don’t have turbinado sugar, just sprinkle the cookies with a little cane sugar after they bake. You don’t want to use cane sugar in place of turbinado sugar before baking as it will just melt into the cookie dough. But sprinkling it on top after baking will give a similar texture as using turbinado sugar! This is the technique I use in my Eggless Chocolate Chip Sugar Cookies.
- These can easily be made orange instead of lemon, just by substituting the lemon for orange and lemon flavor for orange flavor.
Baker's Tips
- Makes sure your butter is soft. I prefer to leave it out on the counter to soften naturally.
- You can scoop these with a cookie scoop if you prefer, I’m just terrible at using them!
- Add in extra dried blueberries on top of the cookie dough before baking to make them look like they are bursting with blueberries!
- Make sure to store in an airtight container.
- High Altitude — Bake for 12 to 15 minutes or until golden brown around the edges.
How to Make Lemon Blueberry Cookies Protein Cookies With Collagen

- Preheat the oven to 375°F. Line 2 baking sheets with parchment paper. Add the cane sugar and lemon zest to a small bowl and mix together.

- Add the butter, lemon sugar, and lemon flavor to the bowl of a stand mixer fitted with the paddle attachment. Mix on low until combined and there are no butter chunks.

- Add the eggs, all purpose flour, collagen, baking powder, and salt and mix together.

- Add the dried blueberries and mix to combine completely.

- Form the dough into 12 cookie dough balls and place on the prepared baking sheets, spacing them evenly apart. You’ll have 6 cookies per sheet.

- Bake for 13 to 16 minutes or until golden brown around the edges. Allow to cool completely on the baking sheets.

No, this recipe is developed for dried blueberries only. Fresh blueberries have more moisture, so the recipe would have to accommodate that. Well, these are a still a cookie! But, they do have added protein from collagen, so I think that's a bit healthier than not having it!

Ingredients
- 113 grams salted butter (softened)
- 113 grams cane sugar
- 57 grams raw honey
- 1 teaspoon lemon flavor
- 1 lemon (zested)
- 2 large eggs
- 255 grams all purpose flour
- 28 grams grassfed collagen
- 1 ½ teaspoons baking powder (I used NuNaturals Organic Collagen)
- ½ teaspoon fine sea salt
- 226 grams dried blueberries
- Turbinado sugar
Instructions
- Preheat the oven to 375°F. Line 2 baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment, add the butter, cane sugar, honey, and lemon zest. Mix on low until combined and there’s no butter chunks.
- Add the eggs, flour, collagen, baking powder and salt and mix together until a cookie dough forms.
- Add in the dried blueberries and mix together until combine completely.
- Using your hands (or a cookie scoop) fork the dough into 12 balls and place on the prepared baking sheets, spacing evenly apart.
- Sprinkle the tops of the cookie dough with turbinado sugar.
- Bake for 13 to 16 minutes or until golden brown around the edges. Allow to cool completely on the baking sheets.
- Store in an airtight container for up to 5 days.
