This is an easy and delicious holiday gift that would be perfect for anyone on your list! Ingredients

- Vanilla Bean: Because this is a mix, I use organic ground vanilla bean. If you don't have this, you can add vanilla extract into the pancakes when you make them.
- Cloves: I add organic cloves into this mix for a warm and cozy spice.
- Baking Powder: Baking powder is necessary for pancakes to rise and become fluffy, but don't use baking soda. Check out my post Difference Between Baking Soda and Baking Powder for more info on the difference.

- If you are staying with friends or family, make it extra special and pick up some Organic Valley butter, buttermilk and eggs so you have everything you need to make pancakes for them!

- Always weigh ingredients for the best results.
- If you are making multiple gifts, I recommend weighing out each one separately. This will ensure you get the correct amount in each bag.
- Make sure to whisk ingredients well so the mix is combined completely.
- If you don't have a tin tie bag, a mason jar is also a great way to gift this!
How to Make Homemade Pancake Mix

- In a large bowl, add the flour, cane sugar, ground vanilla bean, cinnamon or cloves, baking powder, and fine sea salt. Whisk it together until the mixture is uniform.

- Spoon the mixture into a tin tie bag, but don’t close it yet! Print out the instruction card, cut along the dotted lines, and fill out the “to” and “from.” Using a hole punch, punch a hole in the top corner. Cut a piece of ribbon that is 22 inches long. Start to fold over the bag and place the ribbon into the fold. Continue folding over the bag and sealing it shut. Place the card through one end of the ribbon, and tie the ribbon together on top of the bag with a bow.
How to Make Pancakes with Homemade Pancake Mix
- In a large bowl, add the pancake mix.
- Melt 1 cup of Organic Valley Salted Butter.
- Add 3 cups of Organic Valley Buttermilk, 2 large Organic Valley Eggs, and the melted butter to the pancake mix. Whisk to combine completely.
- In a large skillet over low to medium heat, grease it well with canola oil cooking spray. Use 1/3 cup to drop the pancake batter into the skillet.
- Wait for the top of the pancake to start bubbling, about 1 to 2 minutes. Flip the pancake and cook until done, about another 1 to 2 minutes on the second side. Repeat until batter is gone.
- Serve with maple syrup, homemade whipped cream, or fresh fruit.

Recipe FAQ's
Homemade pancake mix is made up of flour, sugar, spices, baking powder and salt. Of these ingredients, the shortest shelf life is 6 months (baking powder when opened, along with flour and spices). So, homemade pancake mix can last up to 6 months in your pantry.
I highly recommend using cloves in this recipe as it gives the pancakes the best warm and cozy flavor. But, if you don't have cloves, you can use cinnamon in their place and it will still be good.
You'll need butter, buttermilk and eggs.
If you can’t find Organic Valley Buttermilk, then you can easily make your own with milk and a lemon. Check out my Organic Buttermilk Recipe recipe. Alternatively, you can use regular milk, but the flavor of buttermilk will not be there.
