While lamb can sometimes be rich or heavy, these Turkey and Lamb Burgers with Dill Sauce strike a beautiful balance of flavorful lamb and lean turkey for a light and flavorful burger. This Mediterranean burger is a light and refreshing twist on classic burgers!

Ingredients

  • Ground Turkey & Lamb: I use a mix of both ground turkey and lamb. This gives you the flavor of lamb, without being too rich which is something I love!
  • Dried Dill Weed: I also use organic dried dill weed inside the burgers for added flavor.
  • Dill Dip: I use my homemade Organic Dill Dip With Sour Cream as condiments in place of ketchup and mustard.
  • Burger Buns: I use Soft White Hamburger Buns for these which is my favorite bun ever! But, Whole Foods makes a good organic option if you don't want to make them from scratch.
  • Lettuce: You can use any kind of lettuce you like, butter lettuce, romaine, spinach or even a mixed greens.
  • Cucumber: The cucumber goes so well with the dill and gives these a nice crunch.

Tips

  • I use a mix of ground turkey to make these leaner with a lighter flavor. But, if you want to use all lamb you can do that.
  • You don't need to grease the pan with olive oil as the lamb burgers are full of fat you don't really need it. The only time I'd recommend it is if you're using a stainless steel pan.
  • If you want melted cheese, I recommend mozzarella. Add this on when you flip the burgers so it melts easily.
  • If you want to add Feta cheese, you can add it on top when assembling the burgers.

What does a lamb burger taste like?

Ground lamb adds a rich, flavorful taste to burgers. It does have a little earthy flavor and can be gamey if you are not used to lamb or new to eating it. This is why I combine it with ground turkey as it's more approachable and gives it a lighter flavor. You get the benefit of the rich and flavorful lamb without a super gamey flavor.

Why are lamb burgers so flavorful?

Lamb is higher in fat, the ground lamb I use is 75% lean and 25% fat. That's a higher fat content than traditional ground beef that is usually used for burgers (typically 85/15). So, this added fat gives these lamb burgers more flavor. It also pairs really well with spices, which is why I add them into the burger for even more flavor.

What is the best ground lamb for burgers?

I buy organic ground lamb from TruBeef, which you can order online, as they are one of the only places that I can find it. Theirs is organic, grass-fed, grass finished and pasture raised, which gives the lamb a really nice earthy flavor and adds to the distinct flavor profile of lamb.

What temperature should lamb burgers be cooked to?

USDA recommends lamb burgers be cooked to 160°F. You can remove them from the heat a little bit before they hit 160°F, around 155°F and cover with foil as they will continue to cook a little bit after sitting. This will give you the juiciest burger!

Can I cook lamb burgers on the stovetop?

Yes, you can make these in a large skillet on the stovetop, which is what I do here. You can also make these on the grill if you prefer!

Can I use another kind of meat?

Yes, you can use ground chicken, beef, or even ground pork. Or a mix of any of these really! Ground beef or pork can replace the lamb as these are higher fat and more flavorful. While ground chicken can replace the turkey for the leaner meat element.

Can I add cheese?

Yes, feel free to add Feta or you can even do a mozzarella which is really good with this. If using Feta, add on top when assembling burgers. If using a melting cheese, add a slice on top when you flip the burgers.

What toppings go well on lamb burgers?

Because lamb is a richer meat, I like using light toppings like I do here. Fresh cucumber, tomato and lettuce are all great as they have a nice crunch and light flavor that compliments the lamb. You can also use crunchy bell peppers, any color works or even some sliced yellow or white onion too. You can also use tzatziki sauce in place of my dill sauce as it's very similar. Hummus is also a wonderful spread that goes well here too!

Can I make lamb burgers ahead of time?

Yes, these are great for meal prep. You can cook the burgers and store in an airtight container in the fridge. Then just reheat and assemble them when you're ready.

How should I store leftovers?

Store cooked burger patties in an airtight container. Keep veggies separate. This way you can re-heat patties and assemble burger so it's fresh and veggies are crisp.

Can I freeze lamb burger patties?

Yes, you can freeze the raw burger patties or the cooked ones, either works. To freeze the lamb patties, place a piece of parchment paper in between each patty and add into a freezer safe bag. This will allow you to easily remove one patty without them all sticking together. If you are freezing them cooked, you can store in an airtight container, it's still nice to add that parchment paper piece in between each one for ease of removal!
