Ingredients

- Butter: I like to use organic salted butter, if you're using unsalted butter, just add 1/4 teaspoon of salt. Make sure butter is soft.
- Light Brown Sugar: I'm using my homemade light brown sugar, but store bought also works. Using all light brown sugar gives these blondies a rich flavor and chewy texture. If you only have dark brown sugar that is also okay too, you'll just have a little richer flavor.
- Bananas: Use overly ripe bananas, which are best for baking because the starches have had time to turn into sugars. This ensures they are sweet in flavor (not starchy) and they blend into the batter well. Bananas make a great egg replacer for eggless blondies!
- Vanilla Extract: Use a high quality pure vanilla extract, I use Simply Organic.
- All Purpose Flour: My favorite is Cairnspring Mills.
- Chocolate Candies: I use Unreal Snacks Milk Chocolate Gems, which are basically M&Ms but made without any artificial colors and they are Non GMO. Such a better option! If you don't have these, you could also use chocolate chips in its place, it's just not as colorful.
- Bunnies: I use Annie's Neapolitan Organic Bunnies.

Baker's Tips
- Always weigh ingredients for the best results.
- I'm using a 9×9-inch square pan, but a round one also works too! You could cut them into triangles if you go this way too.
- Use ripe bananas so you get the sweetness of the banana instead of a starchy flavor.
- If you like nuts in your blondies, feel free to add in walnuts, pecans, peanuts, or almonds. Try around ½ cup and go from there!
- If you want to add frosting on top you could also do that and place bunnies and chocolate candies on top of the frosting for extra decoration. Try that with Vanilla Bean Buttercream Frosting, Strawberry Buttercream with Fresh or Freeze Dried Strawberries, Caramel Buttercream Frosting, or Honey Buttercream Frosting. All these flavors would compliment the banana blondies so well!
- Vegan: Replace the butter with your favorite vegan butter. I recommend Miyoko's.
- High Altitude — Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
- Store blondies in an airtight container so they stay fresh.
How to Make Easter Banana Blondies

- Preheat the oven to 350°F. Line a 9×9-inch baking pan with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, add the butter, brown sugar, and vanilla extract.

- Mix on low until combined and there are no butter chunks.

- Add the bananas in chunks into the dough.

- Mix on low until combined.

- Add the flour, baking soda, and fine sea salt in that order.

- Mix on low until combined.

- Add in the Unreal Gems and the bunnies and mix to combine.

- Transfer to the prepared pan and spread evenly. Top with more bunnies and chocolate candies.

- Bake for 35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the baking pan. (If you’re baking at high altitude, be sure to check the Notes at the bottom of the recipe for high altitude baking instructions).

- Once cooled, cut into 9 bars.

These banana blondies taste like banana, but it's not over powering as we have the addition of chocolate candies, and neopolitan bunnies here too.
Bananas should be overripe for baking. They are softer at this stage, which allows them to easily mix into baked goods. The starches also have had time to turn into sugars, which is what gives baked goods the banana flavor.
They are soft in the center with crispy edges.
Baking powder will work here, but you'll need to use 1 1/2 teaspoons. I use baking soda because there is an acid (brown sugar) to react with the baking soda. But, baking powder also works in this case, you'll just need that additional amount as it's not as powerful. No, they don't melt into the blondies but they may crack slightly.
Yes, you can make them the day before. If you remove from the pan and slice, then be sure to store in an airtight container.
If you under bake them, this will happen. Be sure to test blondies to see if they are done before removing. Use a toothpick or butter knife and look for moist crumbs. If your tester stick comes out wet with batter, they are not done If it comes out super clean, they could be over baked.
Yes, they will be super soft immediately after coming out of the oven. Let them cool completely before removing and cutting.
Be sure to store these in an airtight container so they stay soft and chewy. You can keep at room temperature or in the fridge. If you want longer storage, you can also freeze them! Just store in an airtight container and freeze for up to 3 months. Then, you can thaw one out anytime your craving strikes.
