These organic blondies are so festive for Easter! I use bananas as an egg replacer and for flavor, making these eggless blondies super easy to whip up. Whether you have an egg allergy or just ran out of eggs, these organic blondies are so good!
These eggless blondies are also free of artificial colors, which can be difficult to do around the holidays. I use Unreal Snacks Milk Chocolate Gems, which are just like M&Ms, but they are made with plant based dyes! And, I use Annie's Neapolitan Organic Bunnies. Both of these additions make these blondies festive AF! Pastel chocolate candies and bunnies make these Easter Banana Blondies the perfect Easter dessert.

- Vanilla Extract: Use a high quality vanilla extract, not imitation.
- Bananas: Use overly ripe bananas, which are best for baking because the starches have had time to turn into sugars. This ensures they are sweet in flavor (not starchy) and they blend into the batter well. Bananas make a great egg replacer for eggless blondies!
- All Purpose Flour: My favorite is Cairnspring Mills.
- Baking Powder: Use baking powder, not soda. This creates fluffy blondies.
- Salt: Use fine sea salt.
- Chocolate Candies: I use Unreal Snacks Milk Chocolate Gems, which are basically M&Ms but made without any artificial colors and they are Non GMO. Such a better option!
- Bunnies: I use Annie's Neapolitan Organic Bunnies.

- Baking Pan: I use a 9×9-inch baking pan.

Step by Step Instructions
Step 1
Preheat the oven to 350°F. Line a 9×9-inch baking pan with parchment paper.
Step 2
In the bowl of a stand mixer fitted with the paddle attachment, add the butter, brown sugar, and vanilla extract. Mix on low until combined and then slowly add in the bananas while still mixing.
Add the flour, baking powder, and fine sea salt in that order. Mix on low until combined.
Step 3
Add in the Unreal Gems and the bunnies and mix to combine. Transfer to the prepared baking pan and spread evenly. Top with more bunnies and chocolate candies.
Step 4
Bake for 40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the baking pan. (If you’re baking at high altitude, be sure to check the Notes at the bottom of the recipe for high altitude baking instructions).
Step 5
Cut into 9 bars.
