These Strawberry Cream Drops are rich, light, creamy, and naturally colorful! This homemade strawberry buttercream candy is quick and easy to make. It makes the perfect dessert for Valentine’s Day!

Ingredients

  • Powdered Sugar: I use organic powdered sugar in the filling. Be sure it’s sifted to ensure you have a smooth and creamy filling with no clumps.
  • Strawberry Powder: I use organic freeze dried strawberry powder in the filling. This provides flavor and color. If you don’t have strawberry powder, you can food processor freeze dried strawberries until you have a fine powder (it’s the same thing). I just prefer to buy the powder as it's way less work.
  • Heavy Whipping Cream: I use Organic Valley Heavy Whipping Cream which gives extra flavor and creaminess to this homemade candy. 
  • Dark Chocolate: I use organic mini dark chocolate chips for ease, this eliminates chopping chocolate! These specific chocolate chips have no stabilizers, making them perfect for melting.
  • Freeze Dried Strawberries: This is optional, but if you want to add some crushed up freeze dried strawberries on top of these candies, you can. I think it gives them a little extra decoration, but it’s totally optional!

Easy Substitutions 

  • If you don’t have salted butter, you can use unsalted butter. Add 1/4 teaspoon of salt, or at least taste the filling to see if you prefer it with or without salt.
  • If you don’t have heavy whipping cream, whole milk will also work. But, I think the flavor is better with the heavy whipping cream.
  • You can use a different kind of fruit powder (such as blueberry or raspberry) for a different flavor.
  • You can coat these in milk chocolate or white chocolate as well.

Baker’s Tips for Strawberry Cream Drops

  • Make sure your butter is soft. I like to leave it out on the counter to soften naturally.
  • Always sift your powdered sugar to prevent clumps. This will give you the best smooth and creamy filling.
  • If you don’t have Ateco tip #808 you can just cut a hole in your piping bag, it’s basically the same thing since this is a round tip.
  • I use organic mini dark chocolate chips for ease, as it eliminates chopping chocolate. The ones I use are free of stabilizers, making them perfect for melting. Make sure you are not using chocolate chips with stabilizers in them, as those are not made for melting. This includes ingredients like soy lecithin or sunflower lecithin.
  • You can also chop up dark chocolate bar as well.
  • I don’t temper the chocolate in this recipe because these need to be stored in the fridge for the filling. So, the chocolate stays fine in the fridge. You can temper the chocolate if you are gifting them though and you don’t want them to sweat.

How to Make Strawberry Cream Drops

  1. In the bowl of a stand mixer fitted with the paddle attachment, add the butter, powdered sugar, strawberry powder, and heavy whipping cream.

  1. Mix on low and then increase speed to high and mix for 1 to 3 minutes or until light and fluffy. Be sure to scrape down the sides of the bowl, and mix again to incorporate completely.

  1. Transfer to a piping bag with Ateco tip #808.

  1. Pipe 15 dollops onto the prepared baking sheet. Transfer the baking sheet to the freezer for 30 minutes, or until the dollops are hardened completely.

  1. Melt the chocolate in a microwave safe bowl in 30 second intervals, stirring between each one, until completely melted. (Or alternatively, using a double boiler over the stovetop).

  1. Remove the dollops from the freezer. Drop one dollop into the melted chocolate and remove using a fork like a spoon so the excess chocolate can drip below.

  1. Place back on the parchment paper. Top with crushed freeze dried strawberries (optional). Repeat with all the dollops. Place back in the freezer to set, about 10 minutes.

  1. Then, they are ready to enjoy! Store in the fridge or in the freezer.

Recipe FAQ’s

Can I use fresh strawberries?

Fresh strawberries have so much moisture (water) so it’s not ideal to use them in this recipe. But, if you want to use fresh strawberries, I would eliminate the heavy whipping cream and see how the consistency is. Because the fresh strawberries have so much extra moisture. You may also need more powdered sugar. The consistency should be pretty stiff so they can pipe out and easily stand up on their own.

What if I don’t have the decorating tip?

If you don’t the tip, no worries. You can just cut a hole in your piping bag as it’s just a round tip. So, that’s basically the same thing!

What are cream drops made of?

The base of cream drops are cream and sugar. Store bought cream drops can be made with not so great ingredients like corn syrup, palm oil, soy lecithin, and artificial flavors. But, you can skip all these things when you make these Strawberry Cream Drops at home with just 5 organic ingredients!

Do cream drops candy contain dairy?

Yes, these strawberry cream drops have butter and heavy cream in them. You can make them vegan simply by swapping out the butter and cream for vegan butter and full fat coconut milk.

How should I store strawberry cream drops?

Be sure to store these in the fridge because there is cream in the filling.

Ingredients
  

  • 113 grams salted butter (softened)
  • 284 grams powdered sugar (sifted)
  • 2 tablespoons strawberry powder
  • 3 tablespoons heavy whipping cream
  • 226 grams mini dark chocolate chips
  • Freeze dried strawberries (optional)

Instructions
 

  • In the bowl of a stand mixer fitted with the paddle attachment, add the butter, powdered sugar, strawberry powder, and heavy whipping cream.
