If you like making homemade candy, then this recipe for strawberry buttercream candy is a must bake! I love making my own homemade candy because I can use simple organic ingredients. Many candies are full of preservatives, added colors, and flavors when it’s not really necessary!

These Strawberry Cream Drops are perfect for Valentine’s Day because they combine rich dark chocolate with a light and sweet strawberry filling. Skip the candy shop this year and make these strawberry buttercreams instead. You can package them in a Homemade Chocolate Box or just enjoy them on their own.

Homemade Candy: If you’re a fan of strawberry buttercream candy like you’d get from Fannie May or See’s Candies, then you will love these! With only 5 ingredients, these strawberry buttercreams are so much better than anything store bought.

Light & Sweet: The filling inside is incredibly light and sweet. I use a mix of strawberry powder, butter, powdered sugar, and heavy whipping cream to create an incredibly light, melt in your mouth, strawberry filling.

Naturally Pink: I use organic strawberry powder in the filling of these strawberry buttercreams. This gives them a naturally pink center and it also provides tons of flavor!

5 Ingredients: I love these Strawberry Cream Drops because they have just 5 ingredients! This is a minimal ingredient homemade candy recipe that has so much flavor!

Ingredients

  • Butter: I use Organic Valley Salted Butter, be sure it’s very soft.
  • Powdered Sugar: I use organic powdered sugar in the filling. Be sure it’s sifted to ensure you have a smooth and creamy filling with no clumps.
  • Strawberry Powder: I use organic strawberry powder in the filling. This provides flavor and color. If you don’t have strawberry powder, you can food processor freeze dried strawberries until you have a fine powder (it’s the same thing). I just prefer the powder as there’s way less work.
  • Heavy Whipping Cream: I use Organic Valley Heavy Whipping Cream which gives extra flavor and creaminess to this homemade candy. 
  • Dark Chocolate: I use organic mini dark chocolate chips for ease, this eliminates chopping chocolate! These specific chocolate chips have no stabilizers, making them perfect for melting.
  • Freeze Dried Strawberries: This is optional, but if you want to add some crushed up freeze dried strawberries on top of these candies, you can. I think it gives them a little extra decoration, but it’s totally optional!

Tools

  • Scale: Always use a digital food scale for the best results.
  • Mixer: You’ll need a stand mixer (or hand mixer) for the filling.
  • Piping Bag: You’ll need a large piping bag to pipe the filling into the signature dollops.
  • Decorating Tip: I use Ateco tip #808 to pipe the drops of filling. If you don’t have this tip, you can just cut a hole in the piping bag as this is just a round tip, so it’s very similar!
  • Baking Sheet: You’ll need one half sheet pan to pipe the drops onto. 
  • Parchment Paper: I always use nontoxic parchment paper whenever coating things in chocolate as it allows for easy removal. 
  • Heatproof Bowl: You’ll need a heatproof bowl to melt the chocolate.

Step by Step Instructions

Step 1

In the bowl of a stand mixer fitted with the paddle attachment, add the butter, powdered sugar, strawberry powder, and heavy whipping cream. Mix on low and then increase speed to high and mix for 1 to 3 minutes or until light and fluffy. Be sure to scrape down the sides of the bowl, and mix again to incorporate completely.

Step 2

Transfer to a piping bag with Ateco tip #808. Pipe 15 dollops onto the prepared baking sheet. Transfer the baking sheet to the freezer for 30 minutes, or until the dollops are hardened completely.

Step 3

Melt the chocolate in a microwave safe bowl in 30 second intervals, stirring between each one, until completely melted. (Or alternatively, using a double boiler over the stovetop).

Step 4

Remove the dollops from the freezer. Drop one dollop into the melted chocolate and remove using a fork like a spoon so the excess chocolate can drip below, and place back on the parchment paper. Top with crushed freeze dried strawberries (optional). Repeat with all the dollops. Place back in the freezer to set, about 10 minutes.

Baker’s Tips

  • Make sure your butter is soft. I like to leave it out on the counter to soften naturally.
  • Always sift your powdered sugar to prevent clumps. This will give you the best smooth and creamy filling.
  • If you don’t have Ateco tip #808 you can just cut a hole in your piping bag, it’s basically the same thing since this is a round tip.
  • I use organic mini dark chocolate chips for ease, as it eliminates chopping chocolate. The ones I use are free of stabilizers, making them perfect for melting. You can also chop up dark chocolate as well. If you are using another kind of chocolate chip, be sure it’s free of stabilizers (ingredients like soy lecithin or sunflower lecithin).
  • I don’t temper the chocolate in this recipe because these need to be stored in the fridge for the filling. So, the chocolate stays fine in the fridge. You can temper the chocolate if you are gifting them though and you don’t want them to sweat.

Easy Substitutions 

  • If you don’t have salted butter, you can use unsalted butter. Add 1/4 teaspoon of salt, or at least taste the filling to see if you prefer it with or without salt.
  • If you don’t have heavy whipping cream, whole milk will also work. But, I think the flavor is better with the heavy whipping cream.
  • You can use a different kind of fruit powder (such as blueberry or raspberry) for a different flavor.
  • You can coat these in milk chocolate or white chocolate as well.

How to Store

These have heavy whipping cream in the filling, so I recommend storing in the fridge. Place in an airtight container and store in the fridge for up to 7 days. You can freeze them for much longer, up to three months.

FAQ’s

Can I use fresh strawberries?

Fresh strawberries have so much moisture (water) so it’s not idea to use them in this recipe. But, if you want to use fresh strawberries, I would eliminate the heavy whipping cream and see how the consistency is. Because the fresh strawberries have so much extra moisture. You may also need more powdered sugar. The consistency should be pretty stiff so they can pipe out and easily stand up on their own.

What if I don’t have the decorating tip?

If you don’t the tip, no worries. You can just cut a hole in your piping bag as it’s just a round tip. So, that’s basically the same thing!

How should I store these?

Be sure to store these in the fridge because there is cream in the filling.
