These Sweet Chili Chicken Soft Tacos are sweet with a subtle kick! I marinate the chicken in sweet chili sauce and grill it up. I add that into flour tortillas and make a slaw with cabbage, carrots, red onions, and bean sprouts! These easy tacos are ones you'll want to make over and over again!

  • Chicken: I use organic chicken breasts for a light and lean option, but thighs also work too.
  • Sweet Chili Sauce: I use the Whole Foods 365 Organic Sweet Chili Sauce. You can use your favorite!
  • Cabbage: You can use organic purple or green.
  • Carrots: Organic shredded carrots add a little sweetness here, which I love.
  • Bean Sprouts: Organic bean sprouts may be one of the most difficult produce items to find organic (for me at least) so it's a real treat when we get them. They add a wonderful crunch and texture to these Sweet Chili Chicken Soft Tacos.
  • Tortillas: You can use flour or corn here. I use both with this recipe, but if you're gluten free, then use corn!

Tips

  • If you don't have time to marinate overnight, you can do for an hour and you'll still get added flavor!
  • You don't have to grill the chicken, though I like the charred flavor it brings. You can also pan fry or bake as well if you prefer. If you want grilled flavor without a grill, pan fry in a cast iron grill skillet for grill marks without a grill!
  • Use flour or corn tortillas, either works!
  • For meal prep or leftovers, don't dress all the slaw if you are meal prepping or will have leftovers as it can become soggy. Just dress what you'll eat now.

  1. In a large bowl, marinate the chicken with the sweet chili sauce. Coat it generously and cover and place in the fridge for 24 hours.

  1. Heat your grill and grill chicken to sear the outsides. Continue to cook until it reaches an internal temperature of 165°F.

  1. To make the slaw: In a large bowl add the carrots, red onion, cabbage, and been sprouts. Dress with the Asian dressing to coat completely.

  1. To assemble tacos: In a large skillet, warm flour tortillas. Cut chicken into slices. Place sliced chicken on top of warm tortillas.

Slaw

  • 2 to 3 large carrots (grated)
  • ½ red onion (diced)
  • ¼ cabbage (chopped)
  • 1 cup bean sprouts
  • Asian dressing

For Serving

  • 12 corn tortillas
