Ingredients

- Walnuts: You’ll need organic walnuts, make sure they are raw since we’re toasting them and adding our own flavor. I recently found the best organic regenerative walnuts at Old Dog Ranch, a small farm in California. I highly recommend.
- Butter: I use organic salted butter, but unsalted is fine as you'll add salt to taste anyways.
- Cane Sugar: I use organic cane sugar, it’s what sweetens these organic walnuts. Organic cane sugar is less processed than granulated white sugar.
- Hot Honey: I used Nature Nate’s Hot Honey when I first made this recipe as there’s no organic hot honey on the market yet. But, I have since started making my own Homemade Organic Hot Honey and it's so much better!

Baker’s Tips
- Be sure to use raw walnuts. You don’t want to she roasted, toasted or salted as we’ll be doing that so raw nuts are best.
- You can use another kind of nut if you prefer — peanuts, almonds, cashews, pecans would all be delicious too.
- Parchment paper is key to ensure the walnuts don’t stick, so don’t skip it!
- Make sure to stir halfway through baking to ensure even baking. If your oven has hot spots you can also rotate your baking sheet.
How to Make Hot Honey Roasted Walnuts

- Preheat the oven to 300°F. Line a baking sheet with parchment paper. In a large bowl, add the walnuts and set aside.

- In a medium saucepan, add the butter, hot honey, and 1/4 cup cane sugar and melt over medium heat. When the sugar is completely dissolved, remove from the heat.

- Pour the sugar mixture over the walnuts and stir to coat completely.

- Transfer the walnut mixture to the prepared baking sheet and spread out evenly.

- Bake for 35 minutes, stirring halfway through.

- To make the topping: In a small dish, add together the ¼ cup plus 2 tablespoons cane sugar and 1 teaspoon sea salt and mix together. Sprinkle over the top of the warm walnuts and stir to coat completely. Let cool completely on the baking sheet.
How to Store
Store the homemade walnuts in an airtight container like a glass jar. They’ll stay good in your pantry for up to 1 month. These are similar to Honey Roasted Cashews or Homemade Candied Pecans Without Eggs, they are best eaten right away but they will keep for a bit too!
Hot Honey Roasted Walnuts FAQ’s
Absolutely, you can use traditional peanuts or even pecans or cashews. Just be sure you’re using raw nuts.
Parchment paper is essential for candied nuts like this as it ensures they don't stick to the baking sheet. If you don't have it, grease your baking sheet very well with butter!
These are not super spicy, they are sweet with heat. I personally can't do a lot of spice, and these are really good! You can also use regular honey if you just want honey roasted walnuts, with no spice at all.
Store in an airtight container in the pantry. They will last for up to 1 month.

- 85 grams hot honey
- 57 grams cane sugar
