Honey Roasted Walnuts with hot honey! This addicting snack takes the classic honey roasted peanuts to a whole new level with the addition of hot honey and healthy benefits of walnuts.

I recently came across Old Dog Ranch, the first organic regenerative walnut farm! They have amazing organic walnuts, and I’ve been obsessed.
I also was gifted some of Nature Nate’s new Hot Honey. I’m a huge fan of Nature Nate’s Organic Raw Honey, and no one makes an organic hot honey yet, so I definitely recommend this one! (But, update, I have since made my own Organic Hot Honey which I highly recommend using for this!).
This recipe is a spinoff of classic honey roasted peanuts. But I’m using organic walnuts in place of peanuts as they’re have more health benefits. And I’m using hot honey in place of traditional honey, so you get more depth of flavor!

Ingredients
- Walnuts: You’ll need organic walnuts, make sure they are raw since we’re toasting them and adding our own flavor.
- Butter: I use Organic Valley Salted Butter, you can use your favorite.
- Cane Sugar: I use organic cane sugar, it’s what sweetens these organic walnuts. Organic cane sugar is less processed than granulated white sugar.
- Hot Honey: I used Nature Nate’s Hot Honey when I first made this recipe as there’s no organic hot honey on the market yet. But, I have since started making my own Organic Hot Honey and it's so much better!
- Salt: Use fine sea salt.


Tools Needed
- Scale: Always use a digital food scale for the best results.
- Mixing Bowl: You'll need a large mixing bowl to mix up the organic walnuts and honey mixture.
- Small Pot: You’ll need a small pot to melt the butter, sugar, and hot honey.
- Spatula: You’ll need a spatula to stir the honey mixture and coat the nuts.
- Baking Sheet: You’ll need a half sheet pan to bake these organic walnuts.
- Parchment Paper: I highly recommend nontoxic parchment paper, don’t skip! This will ensure the finished nuts don’t stick to the pan.

Step by Step Instructions
Step 1
Preheat the oven to 300°F. Line a baking sheet with parchment paper. In a large bowl, add the walnuts and set aside.
Step 2
In a medium saucepan, add the butter, hot honey, and 1/4 cup cane sugar and melt over medium heat. When the sugar is completely dissolved, remove from the heat. Pour the sugar mixture over the walnuts and stir to coat completely.






Step 3
Transfer the walnut mixture to the prepared baking sheet and spread out evenly. Bake for 35 minutes, stirring halfway through.
Step 4
To make the topping: In a small dish, add together the ¼ cup plus 2 tablespoons cane sugar and 1 teaspoon sea salt and mix together. Sprinkle over the top of the warm walnuts and stir to coat completely. Let cool completely on the baking sheet.

Baker’s Tips
- Be sure to use raw walnuts. You don’t want to she roasted, toasted or salted as we’ll be doing that so raw nuts are best.
- You can use another kind of nut if you prefer — peanuts, almonds, cashews, pecans would all be delicious too.
- Parchment paper is key to ensure the walnuts don’t stick, so don’t skip it!
- Make sure to stir halfway through baking to ensure even baking. If your oven has hot spots you can also rotate your baking sheet.
How to Store
Store the homemade walnuts in an airtight container like a glass jar. They’ll stay good in your pantry for up to 1 month.
