Ingredients
  

  • 5 pound Organic Prairie Bone In Half Ham
  • 1 teaspoon fine sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 2 tablespoons spicy brown mustard
  • 1 tablespoon apple cider vinegar
  • 5 cloves garlic (minced)
  • fresh parsley (for serving)
  • 1 orange (for serving)

Instructions
 

  • Make sure your Organic Prairie Ham is thawed. Preheat the oven to 350°F.
  • Add the ham to a 5.5-quart Dutch oven or baking dish, cut side down.
  • In a small dish, add the salt, pepper, parsley, and thyme and mix together. Set aside.
  • In another small dish, add the spicy brown mustard, apple cider vinegar, and garlic cloves. Stir together. Add in the spices and stir together.
  • Using your hands, rub the spice mix over the entire ham.
  • Cover the ham with foil lightly. Bake for 45 minutes to 1 hour or until the internal temperature is 140°F.
  • Remove foil and turn oven to 400°F and bake for an additional 10 to 15 minutes, to brown the ham.

Tips
  • Make sure the ham is fully thawed before baking; plan ahead (4–6 hours per pound in the fridge).
  • Preheat your oven to 350°F before putting the ham in, to ensure even heating.
  • Rub the spice-mustard mixture by hand to ensure it gets into all the crevices of the ham.
  • If you want to use a large roasting pan instead of Dutch oven, you can do that too. You'll still just want to cover it with aluminum foil.
  • Use an instant-read thermometer and pull the ham when its internal temp is around 140°F.
  • Let the ham rest for a few minutes after baking before slicing — this helps the juices redistribute.
  • If making ahead, you can reheat on the day of, but try to do minimal reheating so the ham stays moist.
