  • White Chocolate: Use a high quality organic white chocolate that is meant for melting. Be sure to chop up the chocolate into small pieces so it melts easily. Stay away from chocolate chips with stabilizers in them (such as soy lecithin or sunflower lecithin) as this can hinder chocolate melting.
  • Coconut Oil: I use organic coconut oil, which is what makes this magic shell harden.
  • Sprinkles: I use plant based nonpareils, but traditional plant based sprinkles also work too. You can use India Tree Nature’s Colors Nonpareils or their Carnival Mix.   • Use a high quality white chocolate that is meant for melting such as a chocolate bar. Avoid white chocolate chips as these can sometimes be difficult to melt.
  • You can use a double boiler to melt the chocolate or the microwave method, either works.
  • You can use nonpareils or traditional rainbow sprinkles, either works. 
  • Store in a microwave safe container, such as a mason jar so you can microwave it to turn it into a liquid again for using.

  1. In a heatproof bowl, add the white chocolate and coconut oil.

Magic shell is just chocolate and coconut oil. While many store bought varieties contain additional ingredients such as stabilizers, seed oils, or artificial colors or flavors, they are not necessary at all!

Coconut oil makes magic shell harden because coconut oil is an oil that solidifies. That makes it the key ingredient for magic shell to harden naturally when it’s poured over cold ice cream.

How do you make Funfetti desserts without artificial food coloring?

I use sprinkles made with plant based dyes, making this free of artificial colors but full of nostalgia! 

Can I use natural or dye-free sprinkles?

Yes, that’s what I use here. You can use India Tree Nature’s Colors or Supernatural, both are great options for plant based sprinkles.

Is homemade magic shell better than store bought?

It is if you care about quality organic ingredients. Store bought magic shells can contain artificial flavors, colors, seed oils and other things that just aren’t necessary, in my opinion.

Homemade magic shell tastes better than store bought because you are using real ingredients and don’t have all the fillers that store bought versions can have. So, you get a better tasting magic shell. 

Why isn’t my magic shell hardening?

If your magic shell isn’t hardening, it could be because you poured it over room temperature desserts. The key with magic shell is it needs to be cold to harden. Or, if you measured incorrectly and have the wrong ratio of chocolate to coconut oil, this can also happen. Be sure to use a digital food scale for the best results.
