I am Greek, and one of my favorite things is feta. I eat it all the time, so I always have it in my fridge because I order cases of Organic Valley Feta online. It is literally the best feta you will find, if you haven't tried it yet, then do yourself a favor and get it next time you're at the store. But, sometimes I forget it's in our garage fridge, and Delaney found like 5 bricks in there the other day, all that were expiring soon.
So, it's been feta for every meal lately. And, I made this Baked Feta Pasta one night to use feta but also because this is such an easy dinner recipe. Guys, seriously, this recipe is so easy and it's so delicious! This Baked Feta Pasta recipe only requires a few simple ingredients. It starts with baking the feta in olive oil and garlic and oregano, along with some cherry tomatoes and spinach. While that is baking, cook noodles, and once it comes out of the oven you stir them together. It is a super easy dinner, one that would be great for a dinner party as you don't really have to do much. If you've made my Butter Parmesan Pasta recipe before, this one is even easier!

Ingredients & Health Benefits
Pasta: I use organic casarecce noodles, but you can use any pasta you like, even gluten free.
Feta: My favorite feta is Organic Valley, make sure to buy block feta for this! Feta has probiotic yeasts, which can help keep your gut healthy.
EVOO: I use organic extra virgin olive oil as it's loaded with healthy fat and antioxidants.
Spinach: Organic spinach is a superfood! It has iron, it helps with bone health, eye health, your immune system and so much more.
Garlic: You can use whole garlic cloves or minced, either works. Garlic is antimicrobial and and anti-inflammatory so it's a great ingredient to add into your diet daily.
Cherry Tomatoes: I love organic Cherry tomatoes as they are sweet and perfect for a recipe like this where you want some tomato in every bite. Tomatoes also have cancer fighting properties.
Oregano: I use organic dried oregano here for the most flavor and for ease.

Step by Step Instructions
Step 1
Preheat the oven to 400°F.
Step 2
In a small bowl, add the olive oil, garlic, and oregano and whisk together. Add to a 9 x 13-inch baking pan.
Step 3
Add the block of feta in the middle of the baking pan. Add the cherry tomatoes and 2 cups of the spinach around the feat and stir to coat completely in the olive oil.
Step 4
Bake for 35 to 40 minutes, or until the tomatoes start to burst and cheese looks melty.
Step 5
While the feta is baking, cook noodles per the instructions on the box.
Step 6
Remove the feta from the oven, and add in the cooked noodles and the remaining 1 cup of spinach. Stir to combine completely, breaking the feta and letting it coat the noodles. Add salt and pepper to taste.
Baker's Tips
- I used organic casarecce noodles for this recipe, as Delaney pointed out that he thought the cheese would stick more into the small twists of these noodles. He was not wrong. But, you can also just use a penne noodle or even a bow tie if you want.
- Use the best organic feta cheese! My favorite is Organic Valley Feta but if you have a favorite, then use that one. But, you must use a block of feta, you cannot use crumbled feta for this. And, you should never buy crumbled feta anyways as it has additives in it that are unnecessary. As my dad would say, “True Greeks do not ever buy crumbled feta!”
- Make sure to look for visual signs that your feta is baked and the tomatoes are bursting. All ovens are a little different, and if you feel you need more time, then add a couple more minutes. You want this to be baked at a high heat so it melts when you break it and stir in the pasta.
- Store leftovers in an airtight container in the fridge for up to 5 days.
