Step by Step Instructions

Step 1

In a small pot steam broccoli, set aside.

In a large Dutch oven or pot, melt the butter. Add the onions and garlic and sauté until onions are translucent and fragrant, about 3 to 5 minutes.

Step 3

Add the bone broth. Slowly add in the flour and whisk. Continue to whisk for about 1 minute. Add the milk, heavy whipping cream, and grated cheese, salt, and pepper and whisk together. Bring to a boil, and cook for 3 to 5 minutes while lightly stirring.

Step 4

Reduce heat and simmer for about 10 minutes or until the soup coats the back of a spoon.

Step 5

Remove from heat, add half the steamed broccoli and using an immersion blender or hand blender, blend until smooth and creamy. Add in the remaining broccoli and stir to combine.

If you don't have an immersion blender or hand blender, then you can also use a high powered blender like a Vitamix. Just add the soup into your blender at that stage, and blend on high until the broccoli is combined.
