Why You'll Love This Recipe

You guys have been asking me for a Broccoli Cheddar Soup recipe for a long time (like since last year, haha!). And I always try to listen to you guys and what you want. I couldn’t make this basic Broccoli Cheddar Soup recipe last year, because I was busy making Creamy Pumpkin Spiced Soup and Creamy Sausage Potato & Kale Soup. But, today I am going to show you how to make Broccoli Cheddar Soup at home!

This basic Broccoli Cheddar Soup recipe only has a few key ingredients. So, if you are wondering how to make Broccoli Cheddar Soup at home – let me tell you, it is not difficult! This easy recipe for Broccoli Cheddar Soup is one you will want to make as the weather gets colder. It is the perfect cozy soup.

Why won’t my cheese melt in my broccoli cheddar soup?

You must grate your own cheese when you make broccoli cheddar soup at home. When you buy pre-shredded cheese, it has anti-caking agents in there. And those caking agents actually help cheese from melting! So, grating your own cheese will give you more melty cheese.

I have a whole post with 5 Reasons to Grate Your Own Cheese. I highly recommend you read it and learn about why grating your own cheese matters!

What if I don't have an immersion blender?

If you don't have an immersion blender or hand blender, then you can also use a high powered blender like a Vitamix. Just add the soup into your blender at that stage, and blend on high until the broccoli is combined.

What goes with broccoli cheddar soup?

Broccoli cheddar soup is mostly carbs and it’s rich and fatty. This is what makes it so delicious! But, I like to enjoy my Broccoli Cheddar Soup with a salad for some nice balance. But, there are also days when I just want a piece of toast or bread with it. You can also enjoy it with crackers or a sandwich too!

How healthy is broccoli cheddar soup?

I wouldn’t say that broccoli cheddar soup is the healthiest soup out there. Broccoli soup is mainly made out of dairy, cheese, and broccoli. It is a fatty soup – but cheese and milk both have protein. And broccoli has many nutrients like Vitamin C and iron.

If you are using organic ingredients, then this basic Broccoli Cheddar Soup recipe will be healthier than many others out there. Because Broccoli Cheddar Soup is so rich, I can’t eat very much of it, so I love to enjoy it in moderation. And I think that’s a very healthy way to enjoy it! Pair it with a salad such as my Kale Apple Salad!

Why go organic?

You may be wondering why I push organic ingredients for everything, even savory and healthy dishes. Organic ingredients go beyond just health and wellness, and contribute so much to the taste and flavor of a recipe. So, if you think that you're making something healthy and buying fruits, veggies, or meats so maybe you don't need to spend the extra to go organic here – let me sway your thinking.

Organic ingredients are made in a more pure way, therefore using no additives, no GMOs, and minimal ingredients. This really allows the true ingredients to shine – and because of that their flavor shines through. Therefore, organic ingredients are more flavorful than their non organic counterparts. So, just because it's already a healthy recipe, or you're already buying good for you ingredients – it doesn't mean you can skip organic! Trust me here, and make the switch. Your body and your taste buds will thank you!

So, I highly recommend that you buy the best organic ingredients for this recipe! You can also shop my Amazon Storefront for all my favorite organic ingredients here. Tip – hover over each ingredient to see the name. And if you want to learn more about organic foods and the difference, read my post here on Food Labels and What They Mean.
