Step by Step Instructions

In a small pot steam broccoli, set aside.
Step 2
In a large Dutch oven or pot, melt the butter. Add the onions and garlic and sauté until onions are translucent and fragrant, about 3 to 5 minutes.
Step 3
Add the bone broth. Slowly add in the flour and whisk. Continue to whisk for about 1 minute. Add the milk, heavy whipping cream, and grated cheese, salt, and pepper and whisk together. Bring to a boil, and cook for 3 to 5 minutes while lightly stirring.
Step 4
Reduce heat and simmer for about 10 minutes or until the soup coats the back of a spoon.
Step 5
Remove from heat, add half the steamed broccoli and using an immersion blender or hand blender, blend until smooth and creamy. Add in the remaining broccoli and stir to combine.
FAQ's
You must grate your own cheese when you make broccoli cheddar soup at home. When you buy pre-shredded cheese, it has anti-caking agents in there. If you don't have an immersion blender or hand blender, then you can also use a high powered blender like a Vitamix. Just add the soup into your blender at that stage, and blend on high until the broccoli is combined.
Broccoli cheddar soup is mostly carbs and it’s rich and fatty. This is what makes it so delicious! But, I like to enjoy my Broccoli Cheddar Soup with a salad for some nice balance. But, there are also days when I just want a piece of toast or bread with it. You can also enjoy it with crackers or a sandwich too!
I wouldn’t say that broccoli cheddar soup is the healthiest soup out there. Broccoli soup is mainly made out of dairy, cheese, and broccoli. It is a fatty soup – but cheese and milk both have protein. And broccoli has many nutrients like Vitamin C and iron. If you are using organic ingredients, then this basic Broccoli Cheddar Soup recipe will be healthier than many others out there. Because Broccoli Cheddar Soup is so rich, I can’t eat very much of it, so I love to enjoy it in moderation. And I think that’s a very healthy way to enjoy it!
