One of the traditions in my house during Christmas was my mom set up a White Elephant for Christmas day, that was all food! And there were always our favorite things like Chocolate Cream Drops for my dad, Caramel Lollipops for my brother, and peanut brittle for my grandpa.
And, while it was always super fun trying to pick out what we wanted from the wrapped treat pile — and having Bompa yell at you that you better give him his peanut brittle if you ended up with it. We all always shared in the end, and got a sweet treat. And, it was honestly sometimes the most fun I had all day — with just something as simple as a treat!
Ingredients

- Olive Oil: I use organic extra virgin olive oil that helps provide flavor and works to make this super crispy!
- Agave: I use organic agave syrup here in place of traditional corn syrup. You can also use honey if you don't have agave. While honey is not technically vegan, some vegans do eat this and some do not. But, if you are not vegan, the honey makes a delicious peanut brittle as it has such good flavor paired with the peanuts!
- Peanuts: Use organic roasted and salted peanuts. But, since this is getting baked, raw peanuts are fine to use as well.

Recipe FAQ's
If you didn't bake it long enough it can be soft. You can always bake a little longer, until golden brown to your liking, as all ovens are a bit different.
We're not using a candy thermometer here as we are not making traditional peanut brittle so it's not needed. This mixture just needs to be melted, so no thermometer is needed!
I always think they are best to use because they bring more flavor. But, if you prefer raw, that's okay too.
This should be about 1/4 to 1/2-inch thick. It's a good thickness to bite into easily!

Homemade peanut brittle should be stored in a cool dry place. A tin is a perfect vessel to store this holiday treat! I like to put parchment paper in a tin and then put the peanut brittle on top.
