No thermometer needed to make this Easy Vegan Peanut Brittle without corn syrup! And it makes the best holiday gift! Add it to a tin, or wrap up cellophane bags and tie with a ribbon.
Preheat the oven to 325°F. Line a quarter sheet pan with a half sheet pan size of parchment paper (for easy removal, see video).
Add the peanuts to a large mixing bowl. Set aside.
In a small pot add the olive oil, agave, peanut butter, and maple syrup.
Put over medium heat and whisk until everything is combined.
Pour the sugar mixture over the peanuts. Stir to combine completely.
Transfer to the prepared baking sheet and spread it out evenly.
Bake for 25 to 30 minutes or until golden brown. Allow to cool completely on the baking sheet.
Break into pieces.
Store in a cool, dry place.
