This savory appetizer recipe is a huge crowd pleaser. Crispy potatoes, combined with savory and salty bacon and the perfect amount of spice. These organic potatoes are a fun and easy appetizer recipe to make for your next party!
I created this recipe with my friends at Organic Prairie, using their Organic Bacon. This is my favorite bacon as it’s sugar free, born, raised, and processed in the USA, and it’s insanely delicious! Ingredients
- Potatoes: I use organic baby gold potatoes, but you can use your favorite kind.
- Spices: I use organic black pepper, red pepper flakes, garlic powder and onion powder for a simple spice with bold flavor.
- Bacon: I use Organic Prairie Pork Bacon, which is my favorite!
- Fresh Chives: I garnish these organic potatoes with fresh chives, this is optional.
- Dipping Sauces: I serve these organic potatoes with ketchup, BBQ sauce, and sour cream for a trio of dipping sauces. You can also serve with Ranch if you want too!
Tools Needed
- Scale: You'll need a digital food scale to weigh the potatoes.
- 3-Quart Pot: I use my stainless steel 3-quart pot to boil the potatoes first.
- Baking Sheet: You'll need a half sheet pan to bake this appetizer.
- Parchment Paper: I always use nontoxic parchment paper to ensure the bacon doesn't stick.
- Toothpicks: You'll need toothpicks to ensure the bacon stays wrapped around the potatoes.

Step by Step Instructions
Step 1
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Step 2
Fill a 4-quart pot three quarters with water and add a little salt to the water.
Step 3
Add the potatoes (skin on) and bring to a boil. Boil for about 10 minutes until the potatoes are partially cooked. You want the potatoes to be partially cooked because they will cook more in the oven in the next step.
Drain the potatoes and run under cool water.
Step 4
In a small dish, add the black pepper, red pepper flakes, garlic powder, and onion powder and mix together. Set aside.


Step 5
Chop the potatoes in half or in quarters, depending on how bit they are. Cut the bacon slices in half.
Step 6
Wrap the potatoes in the bacon slices and secure them with a toothpick. Place on the prepared baking sheet. Sprinkle the potatoes with the spice mix.
Step 7
Bake for 15 minutes, rotate potatoes, if needed. And bake again for another 15 minutes or until the bacon is crispy and golden brown.
Sprinkle with fresh chives and serve with sour cream, ketchup, or barbecue sauce.

Tips
- I use Baby Gold potatoes in this recipe as they are already small so I only have to cut in half or in quarters. You are welcome to use Fingerling potatoes, Russet potatoes, or even sweet potatoes. You may just have to cut them more to get them bite sized.
- Parchment paper is really crucial for this recipe so they don’t stick. I always prefer to use parchment paper, but sometimes it’s just a luxury and it’s not really needed, but I feel like you should use it here.
- Toothpicks are essential in this recipe as they hold the bacon onto the potatoes while they cook, so don’t skip them! If you don’t have toothpicks, you could skewer these on skewers as well and that would work.
- Be sure to check the potatoes and flip them so the bacon cooks evenly and gets crispy on all sides.
- I serve these with a trio of sour cream, ketchup, and barbecue sauce. You can serve them with any dipping sauces you like!
