This recipe was a popular cookie at my bakery and I'm sharing it with you today! These easy Bacon Chocolate Chip Cookies combine rich chocolate in a soft and chewy cookie with salty bacon bits. If you love sweet and salty cookies as much as I do, then you will love these cookies with bacon!

Combining cookies with bacon is a genius idea. The salty bacon adds fat, flavor, and gives your regular chocolate chip cookie a big makeover. These sweet and salty cookies have no chill time and will are sure to become an indulgence the whole family will love!

Soft & Chewy: These are soft and chewy, just like a classic chocolate chip cookie. And they don’t require any chill time!

Sweet & Salty: Sweet and salty cookies are my absolute favorite (if you haven’t realized by now!). I love the sweet chocolate chip cookie paired with the salty bacon and of course I add my favorite flaky sea salt on top.

Bacon: I mean, do I really need to say more than bacon? Bacon makes everything better!

This is an incredibly old recipe, one I used to make at my bake shop years and years ago. It was retired from the menu due to not always being able to stock organic bacon. So, I partnered with my friends at Organic Prairie to bring this recipe back!

I used Organic Prairie Pork Bacon, which is my absolute favorite bacon! You can buy their bacon online and have it delivered right to your house, which makes it incredibly easy to get organic bacon no matter where you live or what kind of grocery store options you have!

Tools Needed

  • Scale: Always use a digital food scale for the best results.
  • Stand Mixer: I use my stand mixer for ease, but you can also use a hand mixer if you prefer.
  • Baking Sheets: You'll need two half sheet pans to bake the cookies. And depending on how you cook the bacon, you can cook it in the regular oven on a sheet pan or in your countertop oven (which is my preference).
  • Parchment Paper: I always use nontoxic parchment paper as I think cookies bake best with it.

Step by Step Instructions

Step 1

Preheat the oven to 375°F. Line 3 baking sheets with parchment paper.

Step 2

Place the bacon on one of the baking sheets and bake for 10 to 12 minutes or until golden brown to your liking. Remove from the oven, pat dry with paper towels, and cut into small bits. Set aside.

Step 3

In the bowl of a stand mixer fitted with the paddle attachment, add the butter, dark brown sugar, and vanilla extract. Mix on low until combined and there are no butter chunks.

Step 4

Add the eggs, flour, baking soda, and fine sea salt in that order. Mix on low until combined into a smooth dough.

Step 5

Add the chocolate chips and bacon pieces into the dough (reserve about one quarter of each if you’d like to top them with extra before baking, if not you can mix them all in!). Mix on low to combine completely.

Step 6

Using your hands, form the dough into 24 balls and place on the prepared baking sheets, leaving about 1-inch between. Flatten the balls just slightly so they are about 1 ½-inches in diameter. If you reserved extra chocolate chips and bacon, then add it on top of the cookie dough now.

Step 7

Bake for 12 to 14 minutes or until lightly golden brown around the edges. Sprinkle with flaky sea salt immediately after coming out of the oven. Let cool completely on the baking sheets. (If you're baking at high altitude, be sure to check the Notes at the bottom of the recipe for high altitude instructions!).

Baker's Tips

  • Cook the bacon first, this way it has a few moments to cool so it can easily be chopped into small pieces.
  • You can cook the bacon any way you like. Even though I do provide oven instructions, I prefer to cook my bacon in my air fryer (on bake)! You can use your air fryer, toaster oven, or even a skillet if you prefer.
  • The bacon will not cook in the oven in the cookies, contrary to what you might think. So, make sure to cook bacon to your liking beforehand as it won’t change much in the oven. So, there’s no worries about burning it and no need to under cook it.
  • I use dark brown sugar as I prefer the flavor! But, if all you have is light brown it will work, the flavor will just not be as robust.
  • I use semi sweet chocolate chips in these cookies. But if you want to use dark chocolate or milk chocolate they would be equally delicious!
  • To get your cookies “perfectly round” use a cookie cutter (or a glass) to swirl the cookies around to round out the edges right when they come out of the oven for picture perfect cookies. Check out my article How to Make Picture Perfect Cookies for more info on this.
  • If you don't have the flaky sea salt, you can sprinkle with a little bit of fine sea salt too and they will be just as tasty!
  • Make sure to store in an airtight container so these keep their soft and chewy texture!
