Ingredients

- Chocolate Oreos: The best organic Oreos are Newman’s Own Organic Chocolate O’s.
- Chocolate Ice Cream: I use Straus Organic Chocolate Ice Cream, use your favorite.
- Bananas: Use perfectly ripe bananas for this, not overly ripe for this recipe.
- Caramel Sauce: I make my own Homemade True Caramel Sauce, but if you want to use store bought, you can also.
- Organic Oreos: I use Newman's Own Organic O's (which are basically just organic Oreos!) for the pie crust. This cookie crust is quick and easy to make and goes so well with this ice cream pie.

Easy Substititions
- Vanilla: Use vanilla Newman's Own O's along with vanilla ice cream.
- Caramel: Use my Salted Caramel No Churn Ice Cream in place of chocolate.
- Funfetti: Use vanilla cookies, vanilla ice cream and replace the bananas with sprinkles in the layers and on top of the whipped cream.
- Mint Chocolate: Use a mint chocolate chip ice cream and replace bananas with more chocolate chips and replace the caramel with Homemade Chocolate Ganache.
- Gluten Free: Use gluten free cookies.
- Vegan: Use vegan butter, your favorite vegan ice cream (I love Cosmic Bliss Chocolate!) and instead of caramel use Vegan Dark Chocolate Ganache Sauce. Then, top it with Homemade Organic Vegan Whipped Cream.
Baker’s Tips for Chocolate Banana Caramel Ice Cream Pie
- A springform pan is key for this recipe so you can remove it with ease. If you don’t have a springform pan, I’d recommend using a pie pan and form the crust up the sides so you can easily remove slices.
- The trick to scooping the ice cream out is doing it evenly. I use a large spoon and all for flat scoops, but if you have an ice cream space that would be perfect.
- Make sure to use perfectly ripe bananas for this, not overly ripe like you would for baking.
How to Make Chocolate Banana Caramel Ice Cream Pie

- To make the crust: In a food processor, add the cookies and butter.

- Pulse until the cookies are broken up, then blend on high until you have a uniform mixture and fine crumbs.

- Transfer to a 9-inch spring form pan, and press into the bottom evenly. Set aside.

- Slice the bananas. Layer 1 quart of ice cream to fill half the pan.

- Add banana slices.

- Drizzle with caramel.

- Add the remaining ice cream and repeat this process again.

- Then banana slices. Then caramel drizzle. Place the in the freezer.

- To make the topping: In the bowl of a stand mixer fitted with the paddle attachment, add the heavy cream and vanilla extract. Whisk, starting on low to prevent splattering, then slowly increase the speed as the mixture thickens until it’s at full speed. Whisk until stiff peaks form.

- Spread the whipped cream topping onto the ice cream. I also like to add some cookie crumbles on top (optional).

- Chill for at least 4 hours or overnight before serving.
Make Ahead & Storage Instructions
This is a wonderful dessert to make ahead of party because it's an ice cream pie! So, you can make this up to 2 days in advance. Just be sure to cover the pie with plastic wrap tightly so the whipped cream doesn't dry out.
If you have extra slices, just store in an airtight container in the freezer for up to 3 months.

I used a springform pan here so it’s super easy to remove the pie slices. But you could use a pie pan if you prefer, just make sure to grease it well so the slices are easy to get out. Or, you can also use a cake pan if you line the pan with parchment paper. This will help easily remove the entire cake to slice as it is difficult to get slices out of a cake pan if you don't line it with parchment paper.
You can, but it's not as ideal as a springform pan and may be more difficult to get the slices out. Be sure to grease it well with butter!
Yes, feel free to use your favorite vanilla ice cream if you want!
Yes, you can. But, it's so much better if you make your own!
They can turn brown even in the freezer. This can take a few days, so prep this the day before you plan to serve it. If the bananas do turn brown, they are still okay to eat as they are frozen. So, if you have leftovers you can still enjoy it!
Yes, this is a great dessert to make ahead of time as it's frozen. So, you can prep this the day before if needed.
Let the pie thaw for just about 10 to 15 minutes before slicing. You can run your knife under warm water to make it slice easier.
Store in an airtight container in the freezer.
This is best eaten within 2 weeks because of the bananas.
