This simple Beef & Veggie Stir Fry is a quick and healthy dinner that we make all the time in our house. I love making this beef stir fry with stew meat as it’s a great way to use up stew meat in the summertime!

Skip the takeout and make organic stir fry at home! This easy stir fry uses stew meat in a new way. This beef is a quick and easy cut to use for organic stir fry at home. I created this recipe with my friends at Organic Prairie, using their Organic Stew Meat!

This quick and easy dinner is reminiscent of you favorite take out but this organic stir fry is made with pasture raised organic beef that you'll feel good about eating. I add in broccoli, carrots, cabbage, and mushrooms, but you can also use up any veggies you have in your fridge, making this dinner super versatile!

Why You'll Love This Recipe

Organic Stir Fry: While I love Asian food, most all Chinese food or Thai places aren’t use clean organic ingredients so I never want to eat out. It’s incredibly hard to find restaurants making organic food, but especially in this niche. So, making your own organic stir fry at home allows you to use high quality ingredients!

Healthy: Instead of ordering in, try making this easy stir fry instead. Making your own stir fry is so much healthier than going out. This recipe is also super flexible, which is part of why I love it. You can literally use any veggies you have on hand. In this recipe for Beef & Veggie Stir Fry, I used broccoli, carrots, mushrooms, and green cabbage. But, feel free to add in any other veggies you have in your fridge. Other veggies that would also be delicious that we also sometimes make this dish with are: Brussels sprouts, red pepper, onions (red or yellow), purple cabbage, or zucchini.

Soy Free: You can use coconut aminos or soy sauce, whatever you have on hand. I have been avoiding soy lately so always use coconut aminos, and I also like to add a sweet chili sauce on top. I most recently found the Organic Sweet Chili Sauce (from Whole Foods, the 365 brand).

Ingredients & Health Benefits

  • Stew Meat: I use Organic Prairie Stew Meat, making this dish super easy as it's already sliced and ready to go. Pasture raised organic beef has more nutrients than conventional beef because the cow's are outside foraging and eating grass.
  • Baking Soda: I use baking soda to coat the meat. This turns notoriously tough cuts of meat (like stew meat) into more tender meat when it's cooked in a fast way, such as this. While stew meat can be tender when slow cooked, it can be tougher when cooked in a skillet. The baking soda increases the pH of the meat, which makes the proteins harder to bond. The result is a more tender texture, especially for cuts of meat such as this. This part is not necessary, but it makes the meat much tastier in this dish!
  • Sesame Oil: I use a little bit of organic sesame oil for flavor, but if you're avoiding seeds oils, just use EVOO.
  • EVOO: I also use organic extra virgin olive oil for healthy fat.
  • Mushrooms: I use organic baby Bella mushrooms, which have vitamin D
  • Broccoli: Organic broccoli is a cruciferous veggie which will benefit gut health. It also has antioxidants, vitamin C, and more.
  • Carrots: I use organic carrots, which have vitamin A, beta carotene, and more.
  • Cabbage: I use organic green cabbage, but purple also works! Cabbage is a cruciferous veggie, which is great for gut health.
  • Sesame Seeds: I add organic sesame seeds for flavor. Sesame seeds also contain healthy fat, antioxidants, and more.
  • Garlic: You can use garlic cloves and mince them, or use fresh minced garlic from a jar for ease.
  • Coconut Aminos: I always use organic coconut aminos as I've been soy free for a while now. Coconut aminos is basically a healthy soy sauce, it's so good! You can also use soy sauce if you prefer.
  • Green Onions: I add organic green onions, also known as scallions, on top for serving. This is optional, but I love the flavor they add. Green onions have vitamin C, antioxidants, and more!
  • Sweet Chili Sauce: I add organic sweet chili sauce for serving! The Whole Foods 365 brand is my absolute favorite.

Tools Needed

  • Cutting Board: You'll need a cutting board to cut the veggies.
  • Knife: You'll need a sharpe knife.
  • Large Skillet: You'll need a large skillet, you can also use a cast iron skillet too.

Step by Step Instructions

Step 1

Cut the stew meat into thin strips. Add the meat to a mixing bowl and wash with cold water, then pat dry. Add the baking soda and toss completely.

Step 2

In a large skillet, add the sesame oil and put over medium. Add the stew meat and cook until browned, about 5 to 7 minutes.

Step 3

In a large wok or skillet, add the extra virgin olive oil and garlic and put over medium/high heat. Add the mushrooms, broccoli, and carrots. Sauté until the veggies are cooked, about 5 to 7 minutes. 

Step 4

Add the green cabbage, beef, soy sauce, and sesame seeds into the veggies and stir to combine. Continue to cook for an additional 1 to 2 minutes, until cabbage is warm. Remove from heat. 

Step 5

Garnish with chopped green onions. Serve with rice (optional).

How to Serve

You can serve this over white rice, brown rice, or even kale if you want to be extra healthy. You can also serve it with quinoa or eat it on its own. I love making this beef stir fry with stew meat as it uses up extra stew meat from winter, without having to make a hot stew during the warmer months.

Can I make this with chicken?

Yes, if you prefer to make this with chicken you can. I would advise using chicken thighs as opposed to breasts as they don't dry out as easily.

Can I use different veggies?

Yes, feel free to use zucchini, bell peppers, cauliflower, or any other veggies you like or have in your fridge.

What can I use in place of coconut aminos?

If you don't have coconut aminos, you can use soy sauce in its place.
