What is the difference between strawberry preserves, jam, and jelly?
Preserves differ from other fruit spreads like jams and jellies in that they contain larger fruit pieces or chunks of fruit, giving them a more rustic texture. This chunky texture and the inclusion of whole or large pieces of fruit set preserves apart, offering a delightful contrast between the soft, cooked fruit and the sweet syrup. This is why I like preserves more as I love the pieces of fruit and softer texture versus a more smooth jelly texture.
Preserves, jam, and jelly are all made up of fruit and sugar to create a sweet spread you can use on toast or in baked goods, but the consistency of them is all different. Jelly is the most smooth and is made from fruit juice, which is how it achieves its smooth consistency (no fruit pieces).
Jam is made from crushed or chopped fruit. And preserves are made from chunks of fruit, therefore leaving more pieces of fruit in the finished product. Jam and preserves are very similar with just the difference in how large the fruit pieces are. So, they are really interchangeable in recipes.
I'm calling this recipe Organic Strawberry Jam, but to make preserves you can just not mash up the fruit as much, leaving larger chunks. This homemade jam recipe is made with fresh fruit and sugar for a delicious fruit spread you can use on anything!

- Strawberries: You can use fresh or frozen organic strawberries to make this homemade jam, either works! If you're using frozen, you do not need to thaw beforehand as you'll just cook off the excess moisture as you cook down the jam.
- Cane Sugar: I use organic cane sugar, which is less processed than granulated white sugar.
- Lemon: You'll need a lemon as fresh lemon juice will help naturally preserve this Organic Strawberry Jam!

Tips for Homemade Strawberry Jam
- Cut strawberries smaller or larger depending on your preference of preserves or jam.
- If you don't have fresh lemon, lemon juice from a bottle also works!
- Store in a glass container like a mason jar in the fridge.
How to Make Organic Strawberry Jam With Fresh or Frozen Berries

- Remove stems and chop strawberries.

- Add strawberries, sugar and lemon juice to a medium pot. Cook over medium heat until the sugar has dissolved. Turn the heat to high and boil for 1 to 2 minutes, stirring occasionally.

- Turn the heat back down to medium and simmer for about 10 minutes or until the consistency is thick.

- Transfer to a glass jar and let cool to room temperature. Use on toast, bagels, or in cookies and cakes. Store in the fridge for up to 2 weeks.

Yes, absolutely! Frozen strawberries will work in this recipe and there's no need to thaw them. You don't have to thaw them because you are already cooking the strawberries, so that excess water that you would usually want to remove, will just be cooked off in the cooking process.
Not cooking long enough can cause your jam to be runny. The sugars need to reduce in order to solidify. You can always put it back on the stove and reduce it more!
No, just remove the stems.
Homemade jam will last for up to 2 weeks in the fridge. But, I bet you will eat it quicker than that!
