If you love lemonade, then you will love these lemonade popsicles. This frozen summer treat tastes just like your favorite lemonade, but in popsicle form. This recipe is so easy to make and you'll never want to buy store bought popsicles again.
Store bought lemon popsicles can have artificial colors, flavors, aspartame and other ingredients that I do not want to eat when enjoying a moment of bliss. So, I love making organic frozen treats at home instead. These Lemon Popsicles have just 2 ingredients and it's all you need!

Ingredients
- Lemons: I use organic lemons, you can also use Meyer lemons if you want.
- Sugar: I use organic cane sugar for the most natural sweet flavor. Organic cane sugar is the organic version of granulated white sugar, but it's just less processed.
Tools Needed
- Scale: I like to use a digital food scale for ease.
- Small Pot: You'll need a small pot to make the simple syrup.
- Popsicle Molds: I use silicone popsicle molds as it allows you to remove these homemade popsicles so easily! I highly recommend these. You'll also need popsicle sticks.

Step by Step Instructions
Step 1
In a small saucepan, make a simple syrup by adding 1 cup of water and the cane sugar, and put over medium heat. Whisk until it the sugar is completely dissolved, remove from the heat.
Step 2
In a pitcher, add the simple syrup, remaining 4 cups water, and 2 cups lemon juice. Stir to combine completely.
Step 3
Fill popsicles molds, place in sticks, and freezer overnight.

Tips
- I use a silicone popsicle mold here, as it it so much easier than using the plastic ones! I used to have plastic ones and I would always struggle to get the popsicles out unscathed. I highly recommend getting one of these silicone popsicle mold if you like to make popsicles. The only thing to be careful of is to make sure that nothing is touching it while they set up in the freezer, as you can cause the popsicles to freeze in an odd shape if the silicone has been indented!
- The silicone popsicle mold also comes with little plastic sleeves to put your finished popsicles in, which I thought was kinda cool. But, if you already had a mold you can make your own sleeves with plastic wrap or just put them in a ziploc bag. Just be careful when freezing the popsicles as if you put them all together in something, they will all freezer together! So, if you remove them from the molds be sure to wrap them individually so you can easily get one out of the freezer when you want.
- I use fresh lemons in this recipe, which is key! Make sure your lemons are ripe and juicy.
- I use organic cane sugar in this recipe, this is the same as granulated white sugar, but it's just organic. I highly recommend switching to organic cane sugar, as it's so much better for you and it tastes better too.
