Ingredients

  • All Purpose Flour: My favorite is Cairnspring Mills Organic All Purpose Flour.
  • Cane Sugar: I use organic cane sugar, you just need a small amount.
  • Baking Powder: Use baking powder, not soda. This is essential for the right fluffy and pillowy texture of these organic scones.
  • Everything Bagel Seasoning: You'll need organic everything bagel seasoning. My favorite is Frontier Co-Op, and trust me, I've tried so many as I eat this spice daily, this one is so good!
  • Salt: Use fine sea salt.
  • Butter: I use Organic Valley Salted Butter, you can use your favorite.
  • Eggs: Use large eggs.
  • Cream Cheese: I use Organic Valley Cream Cheese, you can use your favorite. Block or tub will both work just fine.

Tools Needed

  • Scale: Always use a digital food scale for the best results.
  • Stand Mixer: I like to my stand mixer for scones as I think it's easier. But, you can use your hands if you prefer.
  • Baking Sheet: You'll need a half sheet pan to bake these organic scones.
  • Parchment Paper: I always use nontoxic parchment paper to ensure the scones don't stick to the baking sheet.
  • Pastry Brush: You'll need a pastry brush to brush on the egg wash topping.

Step by Step Instructions

Step 1

To make the dough: In the bowl of a stand mixer fitted with the paddle attachment, add the flour, cane sugar, baking powder, everything bagel seasoning, and sea salt. Mix on low to for 2 to 3 rotations to combine the dry ingredients.

Using a large grater, grate the butter and add to the flour mixture. Don’t mix yet. Add the egg, cream cheese, and bone broth, and mix on low to combine. (If you're adding cheese, you can also do that now.) You’ll have to scrape the bowl to help combine the dry ingredients, and I find it’s easier to finish combining with your hands.

Step 2

Using your hands, form the dough into a round disk that is about 7-inches in diameter. Using a sharp knife, cut into 6 triangle pieces like a pie. Separate the pieces so they are spaced evenly apart.

Step 3

In a small dish, add the egg and whisk together. Using a pastry brush, brush the tops and sides of the scones to coat completely. Top with the additional everything bagel seasoning.

Step 4

Place the baking sheet in the fridge for 30 minutes. Preheat the oven to 400°F.

Step 5

Bake for 20 to 24 minutes or until lightly golden brown on the bottoms. Allow to cool completely on the baking sheet. (If you're baking at high altitude, be sure to check the Notes at the bottom of the recipe for high altitude baking instructions).

Easy Substitutions

  • If you don't have bone broth you can use milk in its place.
  • If you want to make these Cheesy Everything Bagel Scones, add in 1/4 cup of shredded cheddar cheese to the dough as the last step and mix to combine completely.
  • You can also brush the tops of the scones with bone broth or heavy whipping cream if you don't want to use another egg.
