This simple turkey rub consists of organic poultry seasoning, organic rosemary, organic black pepper, sea salt, and organic extra virgin olive oil. That’s it!
The process is so simple, you mix the spices together and set aside. Brush your bird with extra virgin olive oil all over, and then rub the spices on. You can do this with a stuffed bird, or unstuffed, totally up to you. I made this one unstuffed, as that’s how I prefer my turkey.

Ingredients
Turkey: Organic Prairie Whole Turkey (I had about a 14 pound turkey here)
EVOO: I use organic extra virgin olive oil.
Poultry Seasoning: Organic poultry seasoning does a lot of work as it provides a lot of flavor with just one spice!
Rosemary: I use organic dried rosemary for bold flavor.
Salt and Pepper: Essential for any seasoning!

Step by Step Instructions
Step 1
Make sure your turkey is defrosted. Remove packaging and the bag of giblets from the turkey. Pat dry the turkey with paper towels.
Step 2
Preheat the oven to 325°F. Add the turkey to a roasting pan, breast side up.
Step 3
In a small bowl, add the poultry seasoning, rosemary, pepper, and salt and mix together.
Step 4
Using a pastry brush, brush the turkey with olive oil until it’s completely coated. Sprinkle the spice mixture over the turkey and rub it into the skin until the turkey is completely coated.
Step 5
Cover the turkey with foil. Bake for 15 minutes per pound, uncovering for the last 30 minutes of baking to get a golden brown skin. Bake until internal temperature is 165°F. Serve with oranges and fresh rosemary (optional).

You don’t need much. I didn’t provide a measurement, as it depends on how big your turkey is. The one I shot here was about 14 pounds and I think I used between 2 to 3 tablespoons total. Put a little olive oil in a bowl, start brushing it on, add more if you need it. You just need to coat the skin so the rub sticks to it.
If your turkey is considerably smaller, you can half the recipe for the spice rub. But, even if you don’t use it all, you can store in your spice cabinet and use it on chicken as well!
You can use so many vessels to cook your turkey in. A roasting pan is the best as it allows the bird to brown all around. But if you don’t have a roasting pan you can use a baking pan with a cooling rack on top as well. As long as the turkey fits and there is a place for drippings, then you’re all good. No need to be all fancy. You can always buy an aluminum turkey pan at most grocery stores during the holidays as well if you don’t have something big enough.
It’s always good to check the internal temperature of a turkey before taking it out to ensure that it’s done. A bird this big can look done, and not actually be done, so it’s super important to have a meat thermometer!
