Ingredients

individual ingredients for soft white hamburger buns laid out against a white background.
  • Yeast: I use organic instant yeast so these rise quicker. But, if you want to use active dry yeast, you can use that instead if you prefer.
  • Cane Sugar: You'll need a little organic cane sugar to activate the yeast.
  • Bread Flour: I use King Arthur Organic Bread Flour in these soft and fluffy hamburger buns. Bread flour makes these light, soft, and chewy.
  • EVOO: I use organic extra virgin olive oil, no seed oils here! If you want to use avocado oil instead, you can also do that.
  • Sesame Seeds: I top these homemade hamburger buns with sesame seeds, but you could also leave them plain or do poppy seeds.

Variations

  • Plain: Leave off the sesame seeds.
  • Poppy Seed: Replace the sesame seeds with poppy seeds.
  • Seeded: Add Everything bagel spice mixed with pumpkin seeds in place of the sesame seeds.
  • Hot Dog Buns: You can make these into hot dog buns by forming them into ropes that are about 6-inches long instead of balls.

Baker's Tips for Soft White Hamburger Buns

  • Always weigh ingredients for the best results, especially whenever making bread.
  • Make sure your yeast is good. If it doesn't bubble then it may mean it's expired or it wasn't stored properly. If your yeast doesn't bubble, you'll need fresh yeast for these buns to rise.
  • Don't add much more flour while forming the dough into the buns as this can dry out the buns.
  • If you want to make these into slider buns, you can form them into 12 equal pieces instead and you may need to bake for a few less minutes.
  • Make sure to store these in an airtight container so they stay soft.
  • High Altitude — Bake at 425°F for 8 to 10 minutes or until lightly browned on the tops.

Recipe FAQ's

How do I make soft hamburger buns without eggs or butter?

To make buns soft without eggs or butter, use bread flour, yeast, sugar, olive oil, and water. Knead until the dough is very smooth, you may need more kneading time if you are not using a mixer. Make sure to let it rise until doubled in size. Not letting the dough rise enough can cause your buns to be more dense instead of soft and fluffy. Even the second proof matters, so make sure the buns feel springy before baking!

What is the secret of soft buns?

The dough may be sticky, don't add much more flour as this can dry them out.

Why didn’t my dough rise?

If your yeast is expired or your kitchen is very cold it can cause the dough to not rise. Be sure your yeast is good and let dough rise in a warm place.

How do I know when dough is proofed enough?

Look to ensure that your dough has visibly doubled in size.

How do you shape hamburger buns evenly?

I like the weigh the dough so you ensure you get even pieces of dough. I provide a weight measurement for the buns. This ensures you get equal size pieces of dough and buns that are all the same size!

Why are my hamburger buns dense instead of soft?

If your yeast was expired, the dough won't rise and your buns can be dense. Or, if you don't let the dough rise until it's doubled in size, this can also cause that.

Why are my buns dry instead of soft?

If they are dry it's most likely from over baking. All ovens are a bit different, so start with the lower end of the time frame and check your buns.

How do I keep hamburger buns soft after baking?

Store them in an airtight container to keep them soft.

How should I store homemade hamburger buns?

Store in an airtight container at room temperature or in the fridge.

Can I freeze homemade hamburger buns?

Yes, freeze in freezer safe zip bag. You can freeze them for up to 3 months.
