I love banana recipes as they use up extra ripe (or too ripe!) bananas and turns them into delicious treats. Using really ripe bananas is key, as when bananas ripen, the starches turn into sugars. This creates the best banana flavor for baked goods!
I make a simple banana cake recipe that you can do in your stand mixer, hand mixer or even in a bowl with a whisk. Pipe the batter into your donut pan and bake. Your house will smell amazing – and then you dip the finished donuts in butter and roll in cinnamon and sugar!

Ingredients
- Butter: I use Organic Valley Salted Butter, you can use your favorite.
- Banana: You'll need a very ripe banana. Ripe and overly ripe bananas are best for baking because as they ripen, the starches turn into sugars. This softens the banana, which makes it easier to combine into baked goods. And, it also has a sweeter flavor with natural sugars.
- Eggs: Use large eggs.
- All Purpose Flour: My favorite is Cairnspring Mills.
- Cane Sugar: I use organic cane sugar because it's less processed than granulated white sugar. This also makes these organic donuts naturally sweet, versus being overly sweet especially with the cinnamon sugar coating.
- Dark Brown Sugar: I use my homemade dark brown sugar, but store bought also works.
- Baking Powder: Use baking powder, not soda for the right texture. Be sure to check out my post the Difference Between Baking Soda and Baking Powder for more info on leavening agents.
- Cinnamon: I use organic Korintje cinnamon, which is my favorite variety and has a distinct flavor. Check out my post the Best Cinnamon to Bake With for more info on the different varieties.
- Nutmeg: This is a classic spice used in man donut recipes and it provides a nostalgic flavor!
- Salt: Use fine sea salt.
- Heavy Whipping Cream: I use Organic Valley Heavy Whipping Cream, you can use your favorite.
- Vanilla Extract: Use a high quality vanilla extract, not imitation.
- Kefir: I used Raw Farm Vanilla Kefir in this recipe.

Tools Needed
- Scale: Always use a digital food scale for the best results.
- Mixing Bowl: These organic donuts are so easy, you can just mix them up in one bowl.
- Whisk: I use a whisk to mix up the batter:
- Donut Pans: You'll need two donut pans to bake these.
- Piping Bag: I like to pipe the donut batter into the pans using a piping bag. This is totally optional and you can also spoon it in if need be.

Step by Step Instructions

Preheat the oven to 400°F.
Step 2
To make the batter: In a medium bowl, add the banana and mash up with a fork. Add the egg and stir to combine. Set aside.
In a separate large bowl (or in the bowl of your stand mixer with the paddle attachment) add the flour, cane sugar, dark brown sugar, baking powder, cinnamon, nutmeg, and sea salt. Whisk together (or if using a mixer, mix for a couple rotations to combine the dry ingredients).
Add the banana and egg mixture, the kiefer, melted butter, and vanilla extract and mix together until a smooth batter forms.
Step 3
Grease the donut pans with canola oil cooking spray.
Add the batter into a piping bag and pipe batter into the donut pans. If you don’t have a piping bag you can use a large zip bag (cut the tip off) or you can even spoon it in there.
Step 4
Bake for 10 to 14 minutes, or until a wooden pick inserted in the center comes out clean. Allow to cool completely in the pans. (Make sure to follow the instructions for high altitude at the bottom of the recipe in the Notes section).
Step 5
To make the topping: In a medium bowl, add the cane sugar and cinnamon.
Dip each donut into the melted butter and then dip it into the cinnamon and sugar mixture to coat it completely.

FAQ's
Yes, absolutely! You can use your stand mixer or a hand mixer for this. But, it's really just so easy that even me (the laziest baker) is okay with just using a bowl!
If you don't have dark brown sugar, you can easily make your own Homemade Dark Brown Sugar with my easy recipe! But, you can also use light brown sugar as well, but they won't be as rich in flavor. The only difference between light brown sugar and dark brown sugar is the amount of molasses. So, while you can use these interchangeably in recipes and the recipe will work, the flavor will be different because you aren't getting as much molasses flavor when you use light brown sugar.
If you don't have kefir, then you can use heavy whipping cream in its place. Heavy whipping cream is also thick, similar to kefir, not as thick, but it will work in this recipe.
Yes, if you want to make these ahead of time you can do that! You can either make just the batter the night before, place in an airtight container in the fridge and then just pipe into the donut pans and bake the following morning for fresh donuts! Or you can make the whole recipe and bake them off the day before. Just be sure to store them in an airtight container, like a cake dome, if you are baking the day before so they don't dry out.
