But, I still get a craving for that light and creamy chocolate coconut water that's different than the thick smoothie. So, I have made the best copycat organic coconut water but with chocolate!

- Coconut Milk: I use organic coconut milk as it makes this a little creamy.
- Cane Sugar: I use organic cane sugar as it provides a natural sweetness that cuts the cocoa.
- Dutch Cocoa Powder: I use organic Dutch cocoa powder which provides a rich chocolatey flavor.
- Salt: You'll need a pinch of fine sea salt.
- Coconut Water: I use Harmless Harvest Organic Coconut Water, but the beauty of this recipe is you can use a coconut water that is less than ideal for drinking. I've made this with many different ones and while some coconut waters are not as good, you can use one that is less than ideal for this because of the chocolate. So, if you get one you're not a fan of, use it to make this organic coconut water instead!
Tools Needed
- Scale: Use a digital food scale for the best results.
- Small Pot: I use a small pot to heat everything together.
- Whisk: You'll need a whisk to whisk the cocoa and cane sugar and ensue the chocolate is completely combined with the coconut milk.
- Drink Thermometer: I use a drink thermometer to ensure the milk doesn't burn.

In a small saucepan, add the coconut milk, cane sugar, and cocoa powder. Heat until it reaches 140°F and the cocoa and sugar are completely combined. Remove from heat.
