When you’re craving cherry pie and you’re craving it now, these Cherry Pie Bars are a quick and easy recipe! These cherry crumb bars are a naturally eggless recipe that is much faster to make than pie but tastes like a cherry crumb pie!
I make this recipe in an 8-inch cake pan and cut them into triangles, so they look pie-like! But you can use a 9-inch cake pan, round or square will work.

Ingredients
- Butter: I use Organic Valley Butter.
- Cane Sugar: I use Wholesome in this recipe.
- Dark Brown Sugar: Organic dark brown sugar gives these bars great flavor, I like to make my own Homemade Dark Brown Sugar.
- Flour: I use organic all purpose flour, Cairnspring Mills is my fave!
- Vanilla Extract: Simply Organi is my favorite.
- Cherry Jam: I use organic cherry jam, but you can use any flavor you like! You can also use homemade cherry jam too.
- Cornstarch: I use organic cornstarch to thicken the filling.
- Powdered Sugar: I use organic powdered sugar, I used Wholesome in this recipe.

Step by Step Instructions
Step 1
Preheat the oven to 350°F. Line an 8-inch cake pan with parchment paper.
Step 2
To make the crust and topping: In a large mixing bowl, add the flour, cane sugar, dark brown sugar, melted butter, and vanilla extract. Mix together with a spatula until combined into a dry dough.
Step 3
Reserve ½ cup of the crust for the topping and set aside. Add the remaining crust into the prepared cake pan and spread out evenly with your hands.
Step 4
Bake for 17 minutes.
Step 5
To make the filling: In a small bowl, add the cherry jam and cornstarch and mix together.
Step 6
Remove the crust from the oven and add the jam and spread evenly. Crumble the reserved topping on top of the jam and return to the oven.
Step 7
Bake again for 27 to 30 minutes or until the topping looks dry and golden brown. Allow to cool completely in the cake pan.
Step 8
To make the glaze: In a small mixing bowl, add the powdered sugar and water and whisk together. Drizzle over the top of the bars.
Baker’s Tips
- You can use any kind of jam for this recipe. Try it with blueberry, strawberry, apricot, blackberry or any other jam you like.
- The glaze is optional, though I think it’s completely necessary! But if you want a less sweet bar then you can leave it off.
- Make sure to store these in a cool, dry place. I like to leave them out on a plater on the counter for a few days while we eat them.
